I was very excited to go to Alba to have an amazing carbonara experience. The Ambiente of the restaurant is nice and the waiters are friendly. They are taking their time to explain you every dish if you need suggestions. Every dish was tasting good but nothing where I would say I need to eat more. The octopus main dish biggest ingredient is mash potatoes. The octopus itself was prepared nice but overall not even a whole leg of an octopus. Taste is more important than the amount you eat but when asking 18€, you would think that you atleast get more than 3 cm of thin cut octopus. The main reason we went there was the carbonara. I’m very excited about restaurants that offer this amazing dish. The size of the carbonara is the same as the other dishes. You would need to order atleast two times to get any equivalent amount that you get served in any roman restaurant. The carbonara wasn’t the worst I ate, but definitely not what I would expect knowing the chef was living and working in rome. The guanciale tasted like bacon. The sauce consistency was great but again overall there wasn’t much flavour of the guancale and pecorino. Paying 15€ for that amount of pasta just hurt my soul and my love to carbonara. To be fair, both dishes are my most favourite. If you ever went to Rome for carbonara and you expect to get similar in Alba, you will be disappointed. Mi Experiencia:
Elegí el menú degustación, acompañado de una copa de vino blanco. El coste total fue de 45 euros (menú, pan, vino y agua). La comida se sirvió en un tiempo razonable, alrededor de una hora y media.
El Menú Degustación Incluyó:
Entrante: Focaccia con patata y cebolla caramelizada. Pan: Centeno y focaccia con aceite de oliva. Mejillones: En crema de escabeche, pico de gallo y almendra tostada. Pulguita de Porchetta: Con anchoas del Cantábrico, crema de queso y trufa negra. Pasta Carbonara: Auténtica receta italiana. Secreto Ibérico a la brasa: Con crema de pimientas y col de Bruselas. Tiramisù di Alba: Original y delicioso.
Recomendaciones Personales:
La próxima vez, cambiaría la pasta carbonara por un plato de pescado, respetando mi gusto personal por la pasta más cocida. Además, añadiría la tartaleta de limón, yuzu y sorbete de lima y apio en lugar de la pulguita, para lograr un menú más equilibrado y a mi gusto.
Sugerencia:
Añadir colgadores de mesa para bolsos sería una excelente mejora que añadiría comodidad a la experiencia.

We had the tasting menu and if the taste was salt then it succeeded. Every dish was over salted. The bread was insipid. The amuse bouche was dry focaccia (?) with some onion relish- over salted.
