I have had dinner on a Wednesday and it has been a very pleasant experience. It is noticeable the amount of care about styling the restaurant. The menu was both in Spanish and English upon request.
I see some comments complaining about prices and the lack of a degustation menu, maybe these people are not aware of the times we are living in and surely do not have any background related to the cooking industry. The restaurant had a degustation menu before but they had to remove it because of the economic impact from covid. The ingredients quality is on the highest standards for the price. As a professional I recognize the effort the team is doing to overcome Covid and become a rising star in the culinary panorama in Gran Canaria. It is undoubtedly a luxurious restaurant but not yet on a Michelin star level, they still lack detail, advanced decoration, multiple consistencies, multiple temperatures, breadbasket variance, multiple canapés, a predessert and other elements typical for the first star. Nice to see all tables (except a few for 2 people and the one in the private room) were round.
Quite a few of the dishes had a modern taste on local Canarian dishes. The take on Ropa Vieja was very well executed and the broth was superb. The only flaw I found was the salmon dish where the texture and the temperature of the fish was not quiete there. Also maybe a little too much of the sorbets/ice creams within the dishes (maybe this is a summer menu).
Staff was very professional, bread and water were replenished as often as needed and without needing to ask for it. Staff could be a little more relaxed when explaining the dishes as it seemed they are repeating a memorised dialogue more than a conversational explanation.
Temperature was a little warm and it seemed the a/c was not on.
Gran Canaria is a small place so the people who go out tend to repeat venues so it would be interesting to see how often the menus are changed.
Prices: Price reasonable for the quality offered.

I have quite a few dietary restrictions, the chef adjusted all dishes, so I could eat here amongst others gluten-free, with limited lactose, and without garlic and onion family (garlic, onion, chives, spring onion, etc). All dishes still tasted incredible and well balanced. Do make sure to make a reservation, and if you have any dietary requirements, specify these upfront.
