De los platos a los que hago referencia en esta reseña, he dejado fotos en el perfil del establecimiento.

Hay restaurantes japoneses en Madrid que si te gusta el género, tienes que darte el capricho de ir a conocerlos. Uno de ellos es el restaurante Miyama Castellana. Para nosotros es el perfecto término medio entre los restaurantes japoneses top top de Madrid (Kabukis) y el resto. Excelente comida y muy buena relación calidad precio, aunque es difícil que salgas pagando menos de 40 euros por persona.

Un restaurante japonés con una gran barra y algunas mesas tipo booth. Todo ello llevado por un maitre japonés, tan majete como peculiar, que además es sumiller de vinos y sakes. La verdad que tanto el maitre como los camareros y sushimanes son muy agradables y el ambiente del restaurante es muy bueno.

Tras la toalla húmeda y caliente correspondiente, comenzamos con un aperitivo de wakame y sésamo muy bueno para abrir boca.

El primer plato por el que nos decidimos fue el revuelto de setas japonesas. Suave y sabroso. Muy recomendable.

Después pasamos al espectacular sashimi variado. Para mi, este plato es de obligado cumplimiento. El pescado estaba realmente bueno, pero es que el resto de complementos no se quedaba atrás. Además del wasabi y el gengibre, lo acompañan de brotes, hoja de shiso y nabo rallado. En este plato todo es comestible. Y como prueba os dejamos el resultado final en el que sólo nos faltó por comernos la rodaja de limón.

Todo esto lo estábamos disfrutando junto a una botella de PF 2012. Un vino conquense de la bodega Ponce Pie Franco de la D.O. Manchuela 100% uva bobal. Muy muy bueno.

El siguiente plato fue uno de sus makis especiales. Le pedimos consejo al maitre y sin dudarlo un momento nos dijo que el maki de atún picante era una de las especialidades de Miyama. Simplemente espectacular. Una presentación muy original con el arroz inflado y un sabor excelente. La verdad que este es de los platos que deberían entrar en vuestro menú.

Y de ahí, al sukiyaki. Nuestro plato japonés favorito. En Miyama se compone de sus verduras y setas y finas láminas de ternera de wagyu para cocinar unos segundos y para dentro. Un plato caliente y ligero que a nosotros no encanta. Por si te has quedado con hambre, te ofrecen terminar con unos udones cocidos que sumergen en el caldo para que cojan sabor. La verdad es que aunque te pase como a nosotros, que a estas alturas ya estés hasta arriba, estas cosas hay que pedirlas siempre que la verdad es que están de vicio y por un poquito más de gula no pasa nada.

Por culpa de los udones sacrificamos el postre, pero no el café. Menos mal, porque lo acompañan de unos minardises que realmente merecen la pena. Mezclando fresas, gelatina, té verde... están realmente buenos.

Precio: 65€ por persona. Pero vamos que a tutiplen...

It felt as if though the staff were the ones filling the place and not the other guests. The timing of the servers wasn't all that good either. They removed the plates too quickly and were a bit invasive.

On a positive note. Kudos to the waiter who modified our order for us.

They could also use some fresh menus and good Oshibori (hand wipes). Their bar area needs a touch up. It was uninviting and cluttered.

Unless you're in the area for lunchtime. I wouldn't recommend this...

I recently dined at Miayama, and while the service was satisfactory and the food quite good, my overall experience was marred by an unfortunate issue: an abundance of flies.

From the moment I sat down, I noticed flies buzzing around, which persisted throughout my meal. This was not only uncomfortable but also unacceptable and rather disgusting. Despite the attentive staff and enjoyable cuisine, the fly problem overshadowed the positives, making it difficult to fully appreciate the meal.

Given this issue, I cannot recommend dining here until it is addressed. The presence of flies significantly detracts from what could otherwise be a pleasant...

Ya había ido un par de veces pero creo que la última vez fue ya hace uno o dos años y hay que decir que el servicio sigue igual de educado y atento. La materia prima es impecable, como siempre. La cesta de langostinos es deliciosa. Ya no me acordaba cuál era el saque que había probado en otra ocasión y el maitre nos aconsejó perfectamente. Muy recomendable.
