El Bajío no es un restaurante mexicano a la moda, repleto de sombreros y decorado con los colores de la bandera de México, sino un restaurante elegante y confortable, mucho más en el estilo del ya desaparecido Punto MX o del ahora famoso Puntarena. Nada de mariachis a todo volumen, aquí hablamos de buen gusto. Fue una comida para 4 personas y pedimos todo a compartir. 💶 El coste de esta comida fue de 46€ por persona todo incluido y de 33€ por persona sin incluir las bebidas (vino, agua, cafés, cervezas, refrescos, copas…). 🍴 Empezamos por un guacamole, la verdad es que bastante “sosote” en el aliño, no es que no picara, es que nos dio la impresión de puré de aguacate más que guacamole. No sé si siempre lo preparan así, pero si es así … 🍴 Lo siguiente fueron unos panuchos y yucatecos que traducido a un lenguaje más corriente eran unos tacos de cochinita pibil, sencillamente fantásticos y creo que con seguridad los mejores que he comido. ¡Viva la cochinita! 🍴 Lo siguiente que pedimos fueron unos tacos de langostinos que igualmente estaban excelentes. 🍴 Pollo en mole de Xico. El mole es una salsa que nos gusta bastante y al ver este plato nos decidimos por pedirlo. Nos gustó, pero el mole con el que era servido era demasiado intenso y con demasiado presencia de chocolate, fue el plato que menos nos convenció de la comida 🍴 Por último pedimos unas carnitas que lo venden por peso (Pedimos 500 gramos) muy ricas, pero la verdad es que ya íbamos bastante llenos. Indicar que los tacos que hagas con este plato a nuestro modesto entender mejoran mucho si les añades las salsas que te sirven al principio y que si se te han gastado, debes volver a pedir. What a gem! Everything about our first experience at El Bajio was exceptional. The space is beautiful, serene and very comfortable. We ate early but when we left the restaurant was full and it still wasn’t too loud. The service was warm and professional, and perfectly attentive.

Each dish we tried was expertly prepared, with a lovely variety of flavors and textures throughout. This is refined Mexican food at its best. Standouts were the carnitas tacos (melt-in-your-mouth tender, juicy and full of flavor), the pozole (they offer both a verde and a rojo version, served with a variety of add-ins like chopped radish and onion, oregano, adobo and fresh lime), the lubina (coated with a gorgeous spice mixture and presented whole before being filleted table side), and the huarache with solomillo (homemade masa base topped with puréed beans and perfectly tender meat).
