Tldr: unhappy staff + food poisoning = not fun
As mentioned in the original review below, we were served some food that seemed off, in particular raw clams that tasted like they were not fresh. When writing the original review the morning after eating here, neither my wife nor I were showing any signs of food poisoning.
Unfortunately, that did not continue to be the case. My wife ended up with some minor discomfort throughout the day which resulted in her not eating breakfast or lunch, but I seemed to be fine. That evening, however, just over 24 hours after my meal here, I began having abdominal pain. The pain got worse throughout the evening, until I started to vomit repeatedly. This condition persisted throughout the night. I also ended up with a minor fever during the following day.
Only now, about 48 hours later, am I starting to feel reasonable again. These are classic food poisoning symptoms, and the timing between the meal and the start of my symptoms fits well with the most common types of food poisoning. While it's possible that some other food we ate somewhere else was the actual source of our issues, that seems unlikely to me. Consequently, in spite of their good pork dishes, I'm changing my review to one star.

The wait staff here were extremely unhappy, which made the meal fairly unpleasant. The suckling pig was good, but everything else we ordered, including the tasting menu, was at best tolerable, and at worst clearly not fresh, in the case of the raw clams they served as an appetizer and the fish they served in the tasting menu (so far, the clams don't seem to have given us food poisoning, thankfully...). The food experience begins before you even sit at the table. Miguel walks you over to their cellar for a tour. What’s unique about this tour is not just the wines from their vineyards but also the building itself. As a tourist, I appreciated being inside a cellar/home from the 9th Century. I learned about the structure of the walls, the beauty of the floors, how the residents got their water and stored it, where they placed their kitchen… I do not consume alcohol, and I still found this experience enlightening.
The restaurant itself is a sight to behold. The dining room, which was likely a courtyard of this home before the renovation, is adorned with beautiful art on the walls and wood railing on the above floors. The entire space is a testament to the beauty of the past and the present, making it a perfect setting for a memorable dining experience.
The restaurant inquired about any food allergies/ restrictions, and I appreciated Chef Javier accommodating my food restrictions even though it was a tasting menu. Despite my limitations, the food was as delicious as it was beautiful. Each time Cecilia brought out a dish, it appeared to be a work of art. She would state the ingredients used, where they were harvested, and how they complemented one another in the dish. She even recommended how to eat it to get the best flavor.
