Greeted at the door. They took our coat. Great welcome. Served water and aperitif wine order taken and served quickly.
Hereafter is my interpretation of the evening's menu. It is by no means a complete menu description but an insight into my experience.
Pre course/snack Three small dishes. The first was a delightful bundle of leafy greens. Pleasent. Second, an exquisite assparagus on a crispy bread. The third was a raw shrip. Unfortunately not up to par with previous dishes. Served with a rolled bread that was really lovely
First course was a grav halibut with turnips.
First bite was not what I would expect from a 1michelin star restaurant. As I continued eating the dish developed and I enjoyed it. A bit unbalanced. I felt a lack of acidity.
Second course. Asparagus with herbs and pickled mustard seeds. Good composition, well prepared asparagus. A very well put together course.
Third course. A cod with roe and a wild garlic and halibut sauce. I know it's trendy right now but in my taste the cod was a tad undercooked. The sauce was to die for. The roe was tasty and the cod was well salted but as I said for me a bit undercooked but I know a lot of people prefer it like that now. The finely diced potatoes were a bit too crunchy and I missed the sweetness of a well cooked potato.
Pre-fourth course. A pork tenderloin with a lovage sauce and crumbled cheese. Very lovely. Balanced and flavourful.
Fourth course. A boneless porkchop with canola shoots. A savoury smoky pork. Slightly pinkish hue. Perfectly cooked. Canola shoots are leafy and flavourful. Almost like a sweet and mild leek. This is absolutely reaching the level I was lacking in the first dish. Astonishing!
Dessert Browned butter. I will ommit the description for I will not do it justice. It was flavourful and delicate. A mix of delightful textures and a balanced taste. Sweet with notes of bitter almond and herbacious notes. Caramel butter ans vanilla, with a note akin to cinnamon.
I think a 4 star rating is undeserved. I will rate the food 5 although I would not place every dish at that level.
It might be nitpickint but at this level I would have liked to see all small details nailed.
Well worth a visit. Pricey but a dining experience hard to beat...

The restaurant's standard food offer is a 5-course tasting menu, with further offerings of a 7-course and 9-course versions riffing on the main menu, which is changed weekly based on what the Swedish countryside and the restaurant's purveyors have to offer.
We chose the 5-course menu and were pleasantly satiated. Our July 2019 offering included mackerel, broccoli, potatoes, a Swedish pig breed and strawberries as star ingredients, all of which are 📷 below. What struck us most in the technique and flavor combinations was the sense of balance of every dish. The delicate mackerel, lightly charred broccoli with oyster, and onions filled with onion and cow milk cheese cream particularly stood out.
Wine, beer or non alcoholic pairings are on offer to accompany the food, as is a wine list featuring a vast array of fun and interesting natural wines and other beverages. We had a Ciderday Night Fever (genius branding!) apple cider and passion fruit infused honeymead which were absolutely lovely.
Last but not least, a few words about the interior and the staff: the former is understated and elegant with tones of light olive green paint and beautiful wooden floors and carpentry throughout, and the latter is a small troupe of elegantly uniformed ladies who are both passionate about food and agreeable...
