first off, let me start by explaining that fowlmouth is a thai-owned restaurant with thai staff cooking food they can't fully understand because they didn't grow up in the american south like me. in their defense, it's like an american chef trying to cook authentic thai food - it can be done (think andy ricker) but pretty hard to pull off. i'm not sure how they formulated their hot chicken recipe and why they only use chicken wings or skinless chicken tenders instead of thighs and breasts, but they've got the fundamentals wrong. first, i'm not sure what type of fryer their using but it's either not hot enough and/or they're using the wrong type of oil. the chicken just isn't crunchy and nobody likes soggy chicken. next, the rub blend is overpowered with way too much cayenne pepper. these simple mistakes left my fingers coated in a gritty and damp cayenne pepper texture that wasn't very pleasant. that said, the biggest mistake with their hot chicken recipe is that they serve it dry. nashville hot chicken is best when tossed with a wet hot sauce at the end [5/10]. also, i want to say both in their defense and in an effort to help shape your expectations beforehand - when it comes to making something as complicated as a proper southern biscuit, unless you grew up making these things alongside your momma who learned from her momma, you'll never get it right [4/10]. in regards to their menu sides, they list a pimento mac & cheese but what ended up on our table wasn't that. first off, pimento peppers are next to impossible to find in thailand and pimento cheese means it's a mixture of 100% pimento peppers (emphasis added), grated sharp cheddar cheese, and either dukes mayo which isn't available in thailand or hellman's mayo which is readily available but seemingly too expensive for most thai restaurants who will always see the cheap bagged mayo at 711 as equal quality. whatever their pimento cheese concoction is in real life, it's definitely not pimento cheese. also another error was that the macaroni noodles weren't small elbow like they need to be for this dish to eat more successfully. smaller elbows actually (believe it or not) hold more sauce than the bigger elbows and this is just one more thing that a cook isn't gonna know unless they've both cooked and consumed 500+ plates of mac & cheese before [4/10]. moving on to the waffles that come in their chicken waffle basket; sadly they ate a little raw in the center and imo the batter would be so much better if it just had a bit more sugar added to it or some powdered sugar sprinkled on the top if they want these things to scream "southern waffles" [6/10]. in closing, their fried pickles weren't the worst i've ever tasted, albeit i'd be surprised if the pickles were homemade like they should be [7/10]. their ranch sauce was good [9/10]. should you go? if you're thai, yes - you won't know any better. if you're from the american south like me, maybe best to stick with their burgers or breakfast sandwiches. i might try their chicken sandwich in the future, albeit the menu said it's made from chicken tenders and not a solid chicken breast like we would all expect. i realize my review might read harsh, but i'd love to see them rework their recipes with an american consultant and get better. i think they can get there if they try. a nashville hot chicken restaurant in bangkok is a pretty cool...

Well had the Chicken burger again yesterday and it was not as good as before, actually it tasted a bit funny and was not even that hot. I wonder if they gave me an old burger as I got it like 2 mins after ordering, the fries felt a little bit hard too. The price has also gone up from 250 to 270 and now 290b. Decided to order again today and see and it was night and day, the burger was crunchy and delicious where as yesterday's was not very good and I think was missing the pickles and coleslaw...so I don't know what happened but have to drop a star for inconsistencies.
Other reviews said that this place had the best chicken burger. I was skeptical till I took my first bite! The chicken burger here is life changing! The chicken is perfectly seasoned, crispy on the outside and moist on the inside. The other topping blend together to make the perfect bite, every bite. The seasoned fries are good. The only downside I would say is that the extra mac and cheese side I ordered was unremarkable after eating the Chicken Burger. I only ordered the medium spiciness, might bump it up a notch next time but this is about perfect for me.
Update: Well I tried the hot level and it was good too. The shop gets pretty hot in the afternoon, I think they need to install some shades for the windows.

I had the Hot Chicken Burger with seasoned curly fries and an order of fried pickles. The chicken burger was a large breaded chicken breast that was cooked perfectly. It is very easy to ruin a sandwich with an over cooked rubbery chicken breast but here it was done perfectly. The only problem is the burger bun wasn’t able to hold up to the juicy chicken with the comeback sauce. This is to be expected.
The fried pickles were not overly greasy which tends to happen in some restaurants back home. The problem i find in Thailand is that pickles tend to be on the sweet side and not the sour dill side that I like. I put this down to local tastes.
There is a very good beer selection here. The Estrella Galicia was particularly good. The restaurant itself is small but nicely decorated. I only wish that they would a proper chicken meal on the menu and not just burgers. Also, the heat level is correct. I love hot chicken and middle level was properly spicy. Get it more spicy at your own risk.
Update 17/09/24: I ordered the Littlefowl 1/4 chicken meal. I probably should have went with the medium spice level as the hot was way too hot for me. The chicken itself was good. The problem was trying to order this meal. The staff said it was unavailable and after much confusion I was finally able to get it ordered.
