We recently enjoyed an 8-course dinner at Signature Bangkok. We had a wonderful evening with delicious food. The staff is super friendly and explains the ingredients and how each dish was created. They really put a lot of care into it. It's striking that several ingredients come from France, but the overall experience is a mix of local and French ingredients. The flavors are delicious, and the overall experience has been well thought out. We opted for the 8-course dinner, but even a 5-course meal would have been more than enough. However, we do find the menu a bit pricey for an Asian restaurant. For the same price, you can enjoy a 7- or 8-course meal in a Michelin-starred restaurant in Europe.
That evening, we were the only guests, which we found a bit disappointing. Nevertheless, the service and the food were good.
However, for a Michelin-starred restaurant, we did find a few things disappointing. They have an open kitchen, which is a great idea. Make sure that if the kitchen isn't open yet, guests don't have to listen in on the chef's FaceTime call. That doesn't belong in a restaurant, any restaurant. Chef Thierry should also be focused solely on the preparation during the meal and not visible on their phone. Do that behind the scenes, or simply don't do it at all. Of course, things can sometimes fall over; that's human. But don't take too many risks when bringing tableware and cutlery. One dish was missing an ingredient. We reported this, but they didn't do anything with it, which we found a shame. If you don't use the accompanying wine menu, nothing else is offered. They could have accommodated this by offering something else. In this case, we had to ask for it ourselves. Finally, we found it a shame that the chef didn't come to the table himself, chat, and then leave before the last dishes were served. He also clearly told his staff that. If you're the face of the restaurant, you stay until the last dishes are finished.

And that's exactly what the entire Signature-Team did. They brought it to PERFECTION. I can honestly say it was the best dining experience of my entire life, and believe me I've had a lot of really good dinners around the world.
We opted for the 8 course menu. We don't have any allergies, so we didn't have any changes on any dish. No excuses for the chef if it would be not that delicious ;-).
Every single dish was perfect. The arrangement on the plate looked stunning. The textures of the dishes were sometimes surprising, sometimes refreshing, but always perfectly cooked.
Nowadays in many restaurant you get reduced food. Less fat or sugar or whatever and too often the food sure comes out healthy but has less flavour and isn't as tasty What Signature's Kitchen Brigade brought to the table was a feast for our eyes, our nose AND our palate. Every single dish was full of flavour and made us feel like we were in heaven. A very big compliment to chef Thierry and his team, represented at our table by Khun Boom
In many upscale restaurants you get very good quality service but it's a bit stiff. Not at all in Signature! We were served by Khun Am and Khun Thonphai. Both of them explained all the dishes with passion and the twinkle in their eyes made us feeel like they were explaining it for the first time. They also made us laugh sometimes. Her sense of humor provided the finishing touch to make this dinner one to remember.

My main complaint is that there was too much going on in many of the dishes and it was kind of confusing how to eat it or what flavor profile they were going for.
For example, one asparagus came with 3 different sauces and 3 different toppings (paper, some prosciutto, and a truffle shard). That means a minimum 9 combinations of how to eat a single asparagus. I’m just not sure why it needs 3 different sauces and 3 different toppings.
I really disliked the main dish, the pigeon pie. It was bitter and had foie gras but the foie gras did not stand out at all and didn’t really do much for the pie. I felt like with my previous criticism, there was too much going on in this dish and we could’ve had a separate foie gras dish that really focused on foie gras - but it was lost in the pigeon pie. Also, I think it was under seasoned and maybe that’s why the foie gras didn’t stand out and the whole thing tasted more bitter than anything.
The lobster, in my opinion, was under seasoned but it was cooked really well. Lobster should have some natural salinity and it felt like they washed it out.
The chocolates were all bitter, and I would’ve liked some variety in chocolate sweetness.
As far as service, I think that since there were so many elements to each dish, they should’ve given us instructions on every single dish. But they were really nice!
