From the moment I stepped into Fumi, I knew I was in for something special. The space itself is a masterclass in understated elegance—minimalist decor with clean lines, soft lighting, and just enough design detail to feel both modern and serene. It sets the perfect tone for what turned out to be a truly unforgettable dining experience.
What truly elevated the evening, however, was the exceptional hospitality. Minky, the manager, greeted me by name the second I walked in—timed precisely to my booking. It was such a small gesture, but one that made me feel instantly welcome and seen. Minky is the kind of host who radiates warmth and good energy; jovial, attentive, and genuinely delighted to have you there.
Anduena was my server for the evening, and she was simply charming. Thoughtful, intuitive, and incredibly well-versed in the intricacies of the menu, she turned every course into a personal moment. Her ability to balance professionalism with a warm, engaging presence is truly rare.
I opted for the Omakase, a secret six-course set menu—and what an inspired choice it was. Each dish arrived like a work of art, delicately composed and full of unexpected flavor combinations. The Chicken Katsu Maki was a standout: crispy, tender, and bursting with a rich, umami depth that had me savoring every bite. Every course pushed creative boundaries while remaining beautifully balanced—there wasn’t a single misstep.

Today, my family and I had our first dining experience at Fumi Restaurant Brighton , and it absolutely lived up to our hopes. From the moment we stepped inside, the restaurant impressed with its clean, modern yet warm decor, soft lighting, wooden accents, and subtle Japanese touches created a stylish and inviting atmosphere.
The staff were friendly, welcoming, and genuinely enthusiastic about guiding us through the menu. Their attentive but relaxed service made the meal even more enjoyable.
Now, the food. As someone who eats Japanese cuisine often, I can confidently say Fumi’s dishes were exceptional. We began with a selection of sashimi, which was incredibly fresh and beautifully presented. The dragon rolls were a highlight—packed with flavour and perfectly balanced. The mixed tempura (seafood and vegetables) was light, crisp, and not the slightest bit oily, while the Korean-style chicken was tender and full of depth. The pork dumplings were also delicious, juicy and well-seasoned.
For mains, the short rib was a standout rich, melt-in-the-mouth, and deeply flavourful. The teriyaki salmon was cooked to perfection, and the duck croquettes added a delightful crispy contrast. A pleasant surprise was the hake a fish I hadn’t tried before but will definitely order again.
We ended the meal with a selection of ice cream and a homemade matcha dessert both of which provided the perfect sweet finish to an outstanding meal.
While Fumi isn’t the cheapest restaurant in Brighton, the prices are fair for the quality, freshness, and skill that goes into each dish. The combination of fantastic food, beautiful setting, and genuinely warm service makes this place a real gem.

We arrived on time and when we were asked we confirmed the name of the reservation, the man that welcomed us showed us to our table, no issue or so we thought.
There must have been some issues we weren't aware of, since the front of the house team, all of them, started staring at us and when I looked back they just kept staring. I thought maybe our outfit or something was out of place, I was wearing a cocktail dress with long sleeves and my partner trousers with a shirt, all dark colours.
Well eventually someone comes to our table and asks about our reservation we state the name and they insist we haven't booked the table, we show the email, the waitress goes to the manager and eventually they let us stay. We stayed since the weather was awful and we made the trip although it was a rather surreal experience.
There were plenty of tables so no need to be so strict about the table.
Interestingly the same waitress kept on staring at us and didn't take my order, only my partner's order. So they had two waitresses serving us, which is very unusual.
We believe the issue was that they believed we did something wrong but it was such a strange experience having a waitress being short and refusing service because she didn't believe we were the right people.
We didn't shout or argue, we followed their lead by answering questions and the exchange was handled by my partner who made the reservation, so I am unsure why this lady wouldn't take my order, took my partner's and left and sent another lady to do that.
