I recently had the pleasure of dining at Chayote, the newest gem in London's culinary scene, and I must say it was an absolutely phenomenal experience! This Mexican-Peruvian-Spanish fusion restaurant has truly raised the bar for gastronomic innovation, and I can't praise it enough. From the moment I walked through the doors, I was captivated by the restaurant's charming ambience. The menu is where Chayote truly shines. The fusion of Mexican, Peruvian, and Spanish flavours is executed with unparalleled finesse. The diverse selection of dishes is a delightful journey for the taste buds. The ceviches were a perfect blend of fresh, tangy flavours that instantly transported me to the coasts of Peru. The tostadas were a revelation. I sincerely cannot make up my mind on which was my favourite dish almog those I tried! Every dish is an explosion of flavours so well balanced, you'd just want to have a stomach big enough to try them all. The prawn croquetas are very tasteful but it's on the marinated fish dishes that you can really appreciate the research the chef must have put into the composition of the ingredients. The sea bass chevice, for example, has a very delicate flavour at first, and than the citrus, and the caviar come out. The sesame yellowfin tuna tostata just blew my mind away. If you are not a fish person the short rib tacos won't disappoint you for sure! Vegetarians as well can feast with the wild mushrooms tacos and with the chayote and croquettes tacos. The food was SO delicious I just pull out my phone to take a picture of the amazing dessert for my friend's birthday. Highly recommend! In addition to the great food, the venue is very cosy and the service is top class.

The Squash Pumpkin Sopes stole the show! The corn dough base had the perfect texture—crispy yet tender—and every bite was packed with rich, flavorful goodness.

The Iberico Pork Cheeks Carnitas were another highlight. Served with warm tortillas, the pork was melt-in-your-mouth tender and juicy. My only small issue? As a spice lover 🌶️, I’d have loved a bit more kick in the salsa. Next time, I’ll be sure to request an extra dose of heat!
