I had the pleasure of dining at this incredible restaurant three times during my stay in Aspen, and each experience was just as amazing as the last! From the moment I walked in, I could feel the warmth and genuine hospitality that the owners, Maryanne & Harley provide. They're so involved in every aspect of the restaurant, and it really shows in the atmosphere—there’s a personal touch that makes you feel like you’re a part of their community. The interior is beautifully furnished with a classy yet cozy vibe. The elegant touches create a welcoming environment, making it the perfect place to unwind and enjoy a meal. It’s the kind of place you can feel comfortable in no matter the occasion, whether it’s a casual night out or a special celebration.
I was also moved by their thoughtful initiative to support Los Angeles in dealing with the aftermath of the fires. They’ve put out cards with QR codes that make it easy for guests to contribute to the relief efforts, which shows not only their care for their customers but for the community as a whole.
As for the food—WOW! Everything is delicious, but here are 2 of my favorites. The Mushrooms & Polenta were absolutely divine. The flavors were so rich and comforting, with a perfect balance of earthy and savory. And the layered fries? Genius. Thin slices of seasoned potatoes pressed into a French fry shape, creating an entirely new take on a classic side. It was such a creative twist, and they were perfectly crispy and flavorful.
Every dish is thoughtfully crafted with bold, balanced flavors that showcase the chef’s talent and passion. It’s clear that a lot of love and care goes into everything they do, from the food to the service to the way they engage with their guests. Read morePARC is the new "MUST GO" restaurant in Aspen! I can't say enough about how wonderful our dinner experience was. I'll get to the food, but first, the people and the beautiful restaurant. I can't say enough, every team member was A+! We were lucky enough to have a few drinks at the bar, sorry I can't remember everyone's names, but the bartenders were both fun and made some spectacular drinks. I had a margarita, my fiancé - an espresso martini, both outstanding, and just a fun bar! Dinner, I'll start with our server, Dodo, he was outstanding - a PRO in every way. Our SOM, Jeff, knowledgeable and nice, just a delight to work with. A great wine list and we loved the wine! The food - I could write a book, but I know I am limited in words, trust me, everything was spectacular. Let's give the chef and the team a BIG 5-Star OMG Good! Crudo, pasta starter, beet salad, french-fries - yes fries, trust me, some kind of delicious, coq au vin, pork tenderloin, lamb "two ways", carrot cheesecake, and don't forget the donuts - every single thing, delicious! My dinner at PARC Aspen was the non-skiing highlight of my time in Aspen, it’s a meal I’ll continue to think back to - it was really that good!
Reservation - definitely need to secure one in advance. There were a few quirks with our party, and Jessica was soo kind and accommodating throughout, she set the tone for PARC in such a skilled way.
Ambiance - upscale, coat check, comfortable seating, beautifully set table and there were tasteful Valentine’s Day decorations
Service - Kelci our server was a master, he clearly knew the menu and provided thoughtful recommendations. He was also a wealth of knowledge on all things Aspen. John also worked our table, keeping our waters full and place settings perfect. The som was fantastic, and took the time to ask questions.
Food - loved every dish, everything a 10. The pasta feature was rich. Baby lettuces salad (the kitchen was able to split it to two plates) was likely the best salad I’ve ever had. For my main I had the Ribeye. I’m still thinking about every bite, so tender, perfectly cooked, bursting with flavor! The carrots were a perfect side dish. The desserts were rich and beautifully prepared, I so enjoyed the crème brûlée.
