As vegans (or vegetarians when needed, like when we travel), it’s always so refreshing to find places with options, and the Spring Cafe definitely had options. Of course Aspen is expensive, so we expected that. BUT, I honestly didn’t think what I got was worth the price at all. I got the chickpea tuna melt - which was $23. It was just a regular sized sandwich bread (like a sandwich loaf you'd buy from the store) and it was pretty much just hot chickpeas. With a few chips. I would not recommend it. My husband’s tofu bowl was much, much better and I wish I’d gotten one as well. The veggies were lovely and it was quite tasty - still expensive, but more worth it because it was good. We were lucky to find a place to eat outside, because I honestly didn’t find the inside particularly welcoming. The staff was very indifferent, which was so opposite of every other place we went in Colorado - the people were so nice! Being from Southern California, Aspen just reminded me of a lot of places out there - overpriced, overhyped, someplace where people with money go to feel exclusive. And the Spring Cafe embodied that for me. If the sandwich had been outstanding, maybe fresh bread, some flavor to the chickpeas and not heated all the way through, but more of a "put under the broiler for a minute," that would have been different, but it wasn’t. Read moreAte here this morning with my friend who’s on crutches. We ordered two vegan gluten free green scrambles and two juices and was charged $74. The waitress was very rude and had an attitude when I asked to see the charges.
When the food came out, it was served on a wheat tortilla. When we politely asked for some corn tortillas the manager came out began telling us the we didn’t specify the order was gluten free even tho we ordered gluten free toast and it arrived with the order. She then said that the reason the food was so expensive was “Welcome to Aspen”. She wouldn’t agree to grab a few corn tortillas until my handicapped friend said, “we’re never coming back here”. It was a horrible and stressful experience and it’s tragic that the service industry takes advantage of people here assuming everyone is a high net worth...

I’m giving this restaurant 3 stars because the acoustics are so amazingly bad!!! It’s the loudest place you can imagine if you eat inside - even with the big glass doors wide open. You’ll have to yell during a conversation. I got a headache eating my lunch. Next time I’m ordering to go. Sit outside amongst the beautiful flower arrangements if there is availability. The staff does not really care about providing good service, the priority is to keep the orders over the counter coming without any involvement with the customer. It is a fast paced eatery.
