I had the pleasure of trying Cuantos Tacos during Yelp’s Tacos, Tequila, and Tunes event, and let me just say—I was absolutely blown away by how delicious their tacos were. The real star of the show was their nixtamal tortilla, which took the taco experience to the next level.
These tortillas are wafer-thin yet incredibly sturdy, holding up perfectly to the weight and juiciness of the fillings. While they serve each taco with two tortillas, I’m confident that just one would be enough to support the full taco without tearing or becoming soggy. When I say thin, I mean super thin, but with a flavor and texture that add an impressive depth to the tacos.
The Tacos:
The cachete taco, featuring barbacoa (beef), was the standout for me. Its flavor was distinct and excellent, and the texture was phenomenal—juicy but slightly drier than the other tacos, which I felt worked in its favor. This one was my favorite by far.
The suadero taco, made with confit brisket, was rich and flavorful but leaned toward a softer, mushier texture. Still, the brisket’s richness was satisfying and paired beautifully with the tortilla.
The carnitas taco had a similar profile to the suadero, with rich pork flavors but also a slightly mushy texture. While tasty, it didn’t quite hit the same high notes as the cachete taco for me.
What Stood Out:
One of the most impressive aspects was how well these tacos held up during the event. Despite being premade and served from the event setup, they were still hot and fresh by the time I sat down to eat. That speaks volumes about their quality and preparation.
The salsa deserves its own shout-out. Thick and vibrant, it had to be squeezed out, and its bold, spicy kick added an incredible layer to the already flavorful tacos. It elevated each bite and left me wanting more.
Final Thoughts:
Cuantos Tacos excels in crafting authentic, flavorful tacos that let their nixtamal tortillas take center stage. Each taco had its own unique strengths, but the cachete stood out as a must-try. Whether you're at an event or visiting their spot, the care and attention to detail they put into their food shine through.

The good: The Suadero, Cachete, and Longaniza tacos are all very good. I would recommend these to anyone.
The service was quick and friendly. Even though there were a lot of people there, orders were taken quickly and the food came out within a few minutes.
The not so good: This is not a good value, the tacos are small. I promise they are smaller than you think they are. They have a sign on the front of the trailer that shows an actual size taco, I presume they have done this because people do not really understand how small they will be when they order them. You really will need six of these for a complete meal. $2.75 is a lot for two bites of taco. I suppose it is cheaper than some places in Austin, but it really does not feel like you get a lot for your money.
The Champinones, Buche, and Carnitas tacos are just fine, nothing special. I was particularly disapointed by the carnitas, as I generally expect carnitas to be crispy, but this was not crispy at all, more of just a mushy lump of meat.
The salsas, you get a red and a green, are also just fine. Nothing particularly special.
