Proof on Washington was a wonderful restaurant experience. We came at the 6 o'clock rush, and the restaurant was packed with a line out the door. Being a new restaurant; i don't know if they were ready for the massive crowd that had piled into and out front of the restaurant, but they handled it like pros. They let everyone know they were going to slow down the rate at which they were letting people in because it was starting to overwhelm the kitchen, they asked for patience. Some people in line left and what a mistake they made. By taking a few min and letting everyone catch up, when we were shown to a table they could provide excellent service (Mary) and delicious food. The crab knots were cooked to perfection and there was plenty of crab in the dip. Mary recommended the steak and a patron leaving the restaurant recommended the bourbon burger. Neither disappointed the steak was a perfect medium rare and the onions and mushrooms with sauce was a great pairing with the mashed potatoes. The burger had just the right blend of sweet and smokey flavor and the chips were crisp. Desert was the decadent ending to the meal 2 people had the cheesecake which was rich and creamy, the pecan pie was sweet and tasty paired with a fessh cup of coffee. Overall the whole meal was delicious and a great experience i have no doubt this place will become a favorite for anyone coming to Berkeley Springs. Just remember to have a little patience and be kind and Proof of Washington will provide a great dining experience. Also the menu is a great read.

Read moreThis place is definitely going to be in our return visit list. The food and drinks were both fantastic! Service was super friendly and fast. Seemed like a good crew.
We started with an appetizer, the crab dip pretzel knots. Right up my alley! Loved them.
We got two mains 1) Mac&Cheese with Bourbon Glazed meatballs and collard greens 2) Pork Chop with parmesan risotto and something I'm forgetting. Both were seriously excellent. Even to the point where I loved the collard greens, which normally would be just whatever for me.
As for drinks, I liked my Old Fashioned more than the Cherry Bomb drink I started with. My wife liked her seasonal Apple cocktail drink a lot. They have a great selection of whiskeys.
My only knock on the experience is that I wish the atmosphere was less "old house" and more modern to match the food/drinks and bars' vibe.

You've got a great little menu — creative, well-executed, and a real asset to Berkeley Springs. Your bourbon and whiskey selection? Terrific. Thoughtfully curated and definitely a strong point.
But here’s the rub: For those of us who aren’t interested in hard liquor and prefer wine, your offerings are seriously lacking. It feels like an afterthought. If wine isn’t your strength, that’s okay — but don’t just rely on your distributor. Get educated. West Virginia’s distribution system may be frustratingly limited, but it is possible to put together a solid, well-rounded list.
“One red and one white” doesn’t cut it. Wine isn’t one-size-fits-all. Think about balance, variety, and quality across styles and price points — just like you’ve clearly done with your spirits.
