Passing through Boulder and looking for a quick bite, I stumbled upon Lotus Moon Pho after a quick search. The reviews seemed decent, so we gave it a try—but unfortunately, it fell short of expectations and left us feeling pretty underwhelmed.
The service was just okay. Our server dropped off water for the table and never returned—not even to check in or refill. I ended up walking to the front just to ask for napkins.
The biggest letdown, though, was the food. We ordered spring rolls, pho, and a banh mi. Both the spring rolls and pho were incredibly oily—you could see it pooling on top, which definitely took away from the experience.
The banh mi, on the other hand, was decent—the bread was light and fluffy, and the flavors were good.

I am not vegan but was with a friend who is and we split the crystal rolls and a large Vegan Pho with tofu. The crystal rolls were fresh and herbaceous with a hint of savory meat alternative. The vegan pho was my favorite, I love the noodles they use. Perfect chew and texture which can be difficult with rice noodles. I've had many traditional pho's and while yummy, am not a huge red meat fan so I preferred the vegan version served here. The broth was warm and savory, with lots of asian veggies like daikon not typical in American cooking. Read moreI hate to say that I was really disappointed with this place. As a vegan, I'm always looking to support local plant-based restaurants and I wanted that to be the case here.
The problem is simply that the food is bland at best and gross at worst. I wish I had looked at the menu closely before coming because right on the front page they proudly state something to the effect of, "We don't use harsh smelling ingredients like garlic or onion to promote a meditative state of mind across our restaurant. No MSG, no shortcuts."
I can't speak for everyone, but I feel strongly that fully excluding classic seasonings and ingredients for the sake of a "meditative mindset" does not make a desirable restaurant experience at the cost of good tasting food.
