Lobster Lab — Restaurant in Carlsbad

First time here after hearing good things.** It’s a mini food hall with a nice variety of options. Today, we tried the fresh mini donuts and visited the Lobster Lab. We ordered the lobster roll and the crab grilled cheese. The lobster roll was average — nothing spectacular — and definitely could’ve used more chunks of lobster for the price. On the other hand, the crab grilled cheese was surprisingly delicious. The crab sauce or aioli used on the sandwich was flavorful and really elevated the dish. That said, the crab meat itself was only concentrated in the middle of the sandwich, which was a bit disappointing. For \$22, I expected a more even distribution and a more generous portion of crab. It's incredible that essentially everything on the menu is delicious. The lobster bisque was one of the creamiest and most flavorful l've ever had. I was initially hesitant on the Lobster Mac and cheese sandwich, but it was so meticulously created you can tell there’s passion in each dish they prepare. As it turned out, the lobster Mac and cheese sandwich is now my new favorite. And what's insane is the only thing comparable to their tasty menu is their service. First, Tara and Ketlyn are so friendly! My mom and I stopped by Lobster Lab for lunch and they did not disappoint. We each had a lobster roll (warm with butter), cole slaw, and a bag of chips. The split top bun was toasted to perfection, and the lobster was moist and seasoned well. The cole slaw was beyond delicious - not too sweet, and not too wet. While the location in the food hall is very cute, the acoustics make it very loud, which makes it hard to have a conversation if you do t have perfect hearing (although, there is an area to sit outside).
