My wife and I went to this place in 2023 and really enjoyed our experience. The bartender was awesome. I would give this place five stars except that we went back again in 2024 and sat at the the bar and didn't get waited on for about 10 minutes. There was a larger party that had walked in just after we sat at the bar and they proceeded to serve every one of them before they even took our order. That's the reason I'm giving this place three stars now. Had we received good service this last time we would give them five. It's frustrating when you sit at the bar and expect great service and don't get waited on for at least 10 minutes. I doubt we'll be going back to this place because of that one experience, but I will say their deviled eggs are worth trying out.

They have a huge selection of signature drinks that are very good. They use fresh fruit too! This year we tried two drinks that my wife and I both didn't care for, but that isn't the reason for a negative review.

This is a place that I recommend you try at least once. It is quite expensive though. Drinks range from $11 to $15 per drink, but I would say that it's worth it. That's also a common price now in 2024.

Great atmosphere for date night or a drink with friends, just know that the craft cocktails average $8-$10. The regular menu is a limited offering of tapas/small plate type of dishes, the couple of things that I have tried were good. The male bartender seems to be quite arrogant and full of himself. Brunch was a bit of a disappointment, I ordered "The Remedy" which is a green chili hash dish. The description of the dish had me excited to try it but it really lacked flavor, the green chili was not spicy, the potatoes were boiled and not seasoned. After a lot of salt and pepper the dish was edible. This dish has so much potential, SEASONING is important and I would have liked the option to add sausage or chorizo. My lady got the avacado toast flight it also lacked flavor, which also left us a little bit disappointed. The toast has an avacado/guacamole spread on it and then each one with a different topping. The spread was missing citrus or a salty element, so it didn't taste like much. Both dishes were beautifully plated but lacked flavor. I love what they have done with this historic building. My husband and I do not mind spending a little more money on great tasting drinks and food with character. The staff have always been very kind and welcoming to us on every visit. But the down fall that we did not care for is that it is consistently smokey from the cooking of food. I felt like I could not breath and it is hard to relax and enjoy the atmosphere when its so stuffy. Ventilation is going to have to be put in to correct this major problem. One other con would be that there is no sound barriers in place, so noise carries in this wide open area which kind of gives you the feeling like your in some "bar" which I am sure this is not the feel that they are going for. Once again it is hard to relax and enjoy a casual conversation with your husband when you can not even hear one another. Sound barriers are a great idea to help...

Many people think this is a pricy place but if you consider what you get for the same price in Fort Collins, I think it’s actually quite reasonable. The Paramount is our special occasion place, and we love bringing out of town guests for a cocktail and snack. The liquor list is carefully curated and features locally produced premium products. Snacks are just as well thought out, with interesting twists on your standard bar food. The bartenders are generous with their time and really take pride in their work and it shows. Drinks are delicious without being heavy handed. I have yet to have a single bad experience here, and I can’t wait for their back patio to open again. The Paramount is lovingly local and really represents the best of what downtown can and should offer.

Though I did not order from their food selection, their offerings are varied, unique, sound very delicious, and much more elegant than what you would find at any other drinking establishment. The service is excellent and I would definitely recommend the Ballroom to anyone looking for a nicer place to sit and visit with friends whilst enjoying fine cocktails and uniquely elegant appetisers!

They are actually right next door to each other and share some of the same space and ironically we ended up drinking our cocktail in the exact same seats where we had our coffee previously. The ambiance was more like a coffee shop rather than a bar, but the service was fantastic. Very friendly and we had more than one person check on us once they heard it was our first time there. We got two different cocktails that were both delicious. We did not try any of the food as we had just come from dinner, but they had several options for people who are meatless. I'm sure we will go back.
