CORAL GABLES, FL. – Conveniently and strategically located in the heart of The Gables, Pasion del Cielo seems to keep up its momentum since it open its doors and it’s a better alternative than the beaten path of Starbucks and Einstein Bros. Bagels on Miracle Mile.
At brunch time I noticed that there are no formalities here. Flip-flops, t-shirts and double-breasted suits all waited in line to get their java fix.
As a coffee connoisseur, I didn’t notice a huge taste difference among all of their high-altitude coffee beans. Their Brazilian blend which they rate as a “low acidity” didn’t have a distinctive taste and it was medium in acidity. And if you take your coffee with cream or milk it probably won’t taste any differently than Starbucks’ roasted brand.
But aside from their coffee taste, Pasion del Cielo does have a very cool décor, especially at night. Comfortable couches with cushions and leather sofa seats are a clear indication that they want you to sit, enjoy your coffee and stay long after you finish.
However, the most comfortable seats are always taken by students with laptops or people that come over to work out of the café. The shop has lots of plugs to connect devices and the WiFi is pretty fast here.
Thunder struck in the sky as I took my last drink, and the dark clouds were fast approaching. It was a sign to move on. Keep moving and don’t look back. The passion of the sky will always be with you.

What separates Pasion del Cielo from other coffee shops in town is freedom of choice (cues Devo's groundbreaking album). You see, at Pasion del Cielo, not only do you choose what coffee drink you want (frappe, macchiato, latte, etc.), you get to choose the nationality of the coffee bean as well.
You like your coffee aromatic? Go with the Nicaraguan or Peruvian bean. Full body? Try the Brazilian or Colombian. Full flavor is your thing? Go with the Cuban (of course), the Jamaican, or keep it gringo with the Hawaiian bean.
Pasion del Cielo offers coffee beans from 11 different countries (2 different beans from Jamaica), so no matter your level of coffee snobbery, one, several or all are sure to suit your discriminating taste buds.
WiFi is free for customers and the ambiance is somewhat Starbucky...except the seating here is a lot more comfortable (think comfy sofas, plushy chairs, short stools and a bar-height counter). Dog friendly outdoor seating is also available. Electrical outlets are available both inside and outside.

Right from the outset, the variety of coffee beans on display was impressive. With about 7 to 8 different types, each distinct in aroma and origin, it was a delightful challenge to choose which would make the best espresso or Americano.
The transparency and opportunity to see and judge the beans ourselves added a unique and engaging element to our visit. It's not often that a coffee shop invites you to be so involved in the selection process, and this truly enhanced our experience.
The barista at the shop deserves special mention. Their politeness and expertise were evident in every interaction. They were knowledgeable, offering insights into each type of bean and its best preparation method, which helped us make an informed choice.
The vibe of the cafe was another highlight. It was pleasant and inviting, striking a perfect balance between a cozy, relaxed atmosphere and the lively buzz typical of a popular coffee spot. This made our stay all the more enjoyable.
And, of course, the coffee itself was exceptional.
