I'm not sure there are enough superlatives to describe how wonderful of an experience my wife and I had at major tom.
We celebrated our elopement here last weekend and, from the moment we sat down, the staff truly made us feel like we were guests of honor. There's good service, even great service, and then there's Major Tom in a league of its own. Andrew is unbeatably excellent at what he does–warm, generous, knowledgeable, and attentive–and it was such a pleasure to spend such a special evening with him at the helm.
The food was divine and gorgeously plated (I mean, just look at the photos of the oysters on the website) and easily the best fine dining meal I've had in Denver. Utmost respect to Chef Duncan. The kitchen gifted us two French oysters that were so silky smooth and sharp from the crème fraîche and chive–believe me when I say I teared up. And the panisse! The duck confit! The mushroom tartine! The chicory salad! Everything executed to perfection on flavor and texture. We could not have been happier.
The bar program also deserves heaps of praise. I read the description for the Monks in the Mosh Pit and couldn't order it fast enough. When it came out, I took one sip, immediately handed the glass to my wife, and after she took her sip, we ordered a second one as quickly as we could. I'm so glad we got a chance to talk to Joe, the bar director, who exuded the same level of warmth and generosity we experienced from everyone else all evening. He was kind enough to share with us a pour of 23-year scotch from Speyside that was the perfect cap to an excellent meal.
It's almost funny to go to a restaurant where it's so clear that everyone there is top tier, with a level of passion and excellence that is neither put-upon nor pretentious, and walk away feeling like WE were the ones who did something special. If you've ever read Unreasonable Hospitality by Will Guidara and haven't, as I hadn't, eaten somewhere that captures the essence of said hospitality, look no further than Major Tom.

Read moreOur recent dinner at Major Tom was truly special on so many levels. The food--fantastic. The service--well executed, informed, prompt, and professional. The ambiance--intimate and lighthearted. Honestly, I've been down on the Denver food scene lately and this experience reminded me how a well executed meal can transcend all of those mediocre experiences. In the words of my 5-year-old daughter: mind blown!
First, the food. And yes, we over ordered, but we wanted to try a few things and we figured we could take home any leftovers (which we did).
We started with the Panisse, Beets, Mushroom Tartine, and the Savory Babka. All were excellent, but I think the standouts were the Tartine and the Babka, although the texture of the Panisse and flavor is special, so I'd consider that as well.
For mains, we had the Cabbage and the Bass, both of which were phenomenal. I was really blow away with what they were able to accomplish with the cabbage. Deep miso flavor along with homemade gluten free croutons and silky yet firm cabbage, charred to perfection, makes for a flavor explosion with each bite. And the Bass was cooked perfectly with crispy skin and a flavorful sauce.
We wrapped up with the cream puff, which was unsurprisingly delicious. Overall it was a terrific meal.
The service was also excellent. We sat at the chef's counter which was a fun experience because we interacted with both the kitchen staff and our waiter. The courses were well timed, and the food was presented to us within moments of being prepared. When we got the bill, I felt that the price was more than fair given the overall experience.

Read moreIn all of my travels I have rarely (if ever) experienced such a perfect marriage of atmosphere and excellence of flavor in a restaurant. Major Tom just GETS IT. An exceptional dining experience cannot exist without both, and this place truly is exceptional.
I've actually been kind of at a loss to properly describe my dinner here. Its like they're pumping magic pixie dust through the vents, because the vibe truly is ethereal. It honestly just felt so good from the second I walked through the door. Service from everyone was flawlessly attentive and effortlessly kind. I love a place where you can see the passion on the faces of all the staff. They know that they are part of something special, and they seem genuinely excited to share it with you.
This environment is expertly accompanied by a shared dining experience. They offer small plates meant to be enjoyed as a collective, but not in the pretentious hipster style tapas sort of way. Indeed nothing is pretentious at all here, and everything is shockingly approachable for food cooked with this much expertise. The flavors are surprising but deliberate, unique yet still welcoming. They intrinsically knew that part of what would make this adventure so magnificent is being able to experience each dish together, and to be able to talk about whatever the heck just happened in your mouth and how much you can't wait to see what comes next.
