The "new" wave of "bagels", particularly Noah's, are baked in a steam oven using frozen dough from their commissaries. A one-step, foolproof process. That enables them to have the large, puffy product that, along with good marketing, brings in droves of consumers who don't know any better. My brother has been with Einstein/Noah's for quite a few years so I do know how they do it. About 25 years ago, Noah (Alper) was just starting out when he proposed his product to me when I was running the food service at California Pacific Medical Center in SF. We tried them out in the doctor's lounge, and all the docs wanted to hang me. They HATED Noah's. We switched back in a hurry.

I think I torture myself by going back just because I don't want to drive the extra 5 mins to the place that makes correct EVERYTIME I order. At least they use to get it right a couple times out of 5 that I go. But for the past few months, EVERY time I go there they mess up the order somehow. Charging extra and shorting you on your order to heating things I asked to be cold and giving me cold things I asked for hot. The customer service has never been there, but what can you expect from a bagel shop? From now on I'll be driving the extra 5 mins or less and just get a good coffee or FRESH, REAL fruit smoothie and a cream cheese bagel from AJ's Coffee down the road.
