Ok folks if your looking for real BBQ taste ,flavor even the nicest hospitality that is associated with BBQ style of food well the traveling food you crave is closer to fulfilling your craving then you know. First don't let the words "Food Truck" discourage you from getting to eat some of the best food at even or lower then any fast junk food out there. Mc Ds and T-Bell you know whom I'm talking about. Drove from Trail with beautiful wife Emily and our 2 dogs Uzi and Lucy. Let's say it was a short drive to reach the Pot of Brisket and Loaded Mac and Cheese. And if your lucky you will also get an extra bonus of having thier Texas Twinkies. Which are so loved you'll think you found the Golden Ticket from the movie Willy Wonka, and if you are there at the right time order an extra 1 or 2 for me, I will pay you back om payday. And if you can't decide between the Loaded Mac N Cheese and the Loaded Potato just do what I'd do just get both. Your welcome. You cant get to loaded. As for describing the ingredients and any pictures. Well they say a picture is worth a thousand words. Maybe, a thousand words is alot and I should know read my reviews. Ok full disclosure. We ate all the food yes we me and my woman. Me man me eat meat all meat and the sweet corn bread muffin. We drove about 1 mile and that was it. We figured we are adults that show restraint. We surely could make it back to sit down like civil humans and eat and have conversations. I was wrong anyone who past us parked sideways in busy convenient store must of thought we were cannibals with BBQ sauce all over our faces and hands dogs licking us. The wife even tried to dirty food trick asking me to get her something from the store. I don't think so, as soon as I would have shut the car door I would have lost all food and would have gotten watch her nap after I saw all yummiest of food disappear while she never made eye contact with me looking at her thru the window. Been there done that. Did I mention that's why there are no pictures. I promise I will add some very soon. But hey you don't have to have a picture of heaven to know its beautiful. There's just happen to be BBQ and not a universe created by the Lord of Lord's. I feel awful to have to leave this review, because the people running the truck were very kind and friendly. I had hope when I ordered. I was so excited to see cowboy beans and loaded macaroni and cheese. We also ordered a Mr. Brisket Sandwich. I first tried the sandwich.. the meat didn’t seem to be brisket, but rather like someone cooked a roast all day in a crockpot filled with water. It was flavorless. I then tried the loaded macaroni and cheese, in hopes it was a better option. This also had little to no flavor. Okay, I’m hungry, so I eat it because I paid $40 for it. Hoping for my excitement about the cowboy beans to be fulfilled with flavor, only to discover that these were not meat filled delicious cowboy beans, but what seemed to be a heated can of Bush’s baked beans. I’ve had cow boy beans, this is not that. I won’t be going back to this restaurant. It’s not worth the money, flavor wise, anyways. This place is making it impossible to get skinny. If I go to a restaurant these days, I want the visit to be truly unique and special. Rolling Smoke certainly offers a fantastic culinary experience.

I had an intense craving for brisket, and I hung out before they opened like a kid watching cookies in the oven. Shannon soon brought me an art piece of a sandwich. The meat is always the highlight for me. The rich, smoky meat held onto its bold flavors and juices beautifully. The sandwich doesn't stop there, though.

The toppings and onions were the perfect addition to keep these trophy flavors well balanced and fresh. Every bite welcomed another. It took every reserve of willpower I had to not order seconds.
