Came here on a Friday night and it wasn't too busy, decided to go all out ordering with friends. Several items didn't make it out to the table and we had to remind staff of our order, some appetizers came out cold still and some took way too long to make it out for the size of the crowd. Had some clean bowls come out with oil on them. Had to fight for drink refills and definitely needed more utensils for sauces. For being not that busy on a Friday night it was loud and the place could use more sound breaking decor as it feels like an echo chamber with the open tile floor everywhere.
That being said we had some of the best food with the beef bulgogi being a highlight of the night! between the 4 of us we spent about 200 dollars there, but again we did decide to go all out and order two hot pots and a ton of food. Living in the Bay Area and Vegas gave me exposure to Hotpot and worldly cuisines at their peak level. Michelin 3 star dining experiences also informed what's at the perceived "top" of the industry.
Ginger delivers hot pot that is superior to anything I ever had in the Bay or Vegas. The ingredient quality is also top notch for the area. The staff is so involved and caring that it gives me immense hope for restaurants locally. I've never been treated so well by ownership, management, and floor staff in Humboldt.

Our party of five started with delicious dim sum appetizers before diving into some authentic hot pot. We did a 50/50 split with spicy broth and house broth—both were amazing!
I ordered lamb shoulder, pork belly, marinated beef, Chinese vegetables, and cabbage, noodles and everything was fresh and flavorful. The broth was absolutely fantastic—reminded me of the authentic hot pot I enjoyed in Taiwan last year.
The sauces were a highlight, too! They brought out five different kinds, including a spicy chili oil and a house garlic oil so…….good I could’ve eaten it by the spoonful.
The portions were huge, the price was super reasonable. When our broth started running low, the owner came out to top it off!
