There were more than a few people that wrote about bland food or less than favorable ratings. So I thought it was very important to share a fair and honest review. My wife and I had reservations for 6:30 on Valentines day. So lesson number one that I can share. In years past - this day comes and goes because I have not prepared well by getting a table locked down for where we want to go. I got us a table 6 weeks in advance. Not sure you need to be this prepared - but I was standing there waiting for our table to be ready and witnessed a young fella and his lady getting the bad news - they were booked well into the evening until after 9PM. I have done the same many times...and maybe it was time for me to be a bit more prepared. We got to the table in a dining room that was not over crowded though they had every table accounted for. There was enough room for people to be comfortable and the noise level was minimal. Kevin was the lead in supporting our ordering - and one of the best at his job I have ever had the pleasure of meeting. He got us moving forward with menus and before we could say a thing he had us set up with wine glasses and ice water. The service is provided by a team of people - Kevin was our lead and he was attentive - but not a pest. Truly a gift. We ordered our meals - Started with an appetizer...large shrimp stuffed with crab and wrapped with bacon....and wow....when we received this - the smells and that first bite was a delight. Note also - we received some bread rolls and spreads that were so very fresh and warm and worked well with our initial sips of wine. We ordered a bottle of wine - from a huge selection of wines - from all over the world - ours was a red from Argentina. It was a gem - and though the list of wines includes some pricey bottles by any standard - our bottle was one of the more affordable at about 50 dollars. We ordered our meal - myself I ordered a ribeye and my wife ordered the filet. Important to note that meals do no not come with any sides so in our case, we ordered a lobster mac n cheese and au gratin potatoes - these are dishes big enough for 2. In reflection, we both thought we should have ordered some of the delightful green veggie choices. Broccolini and asparagus look like the healthier choices and will on m y order when I go back. I also ordered soup, lobster bisque. If you like to start meals with something warm and yummy - this soup will stun you - it was a delight...and as someone who loves a good cream soup - I was wowed. Our meals came at a pace where we never felt rushed but honestly we never were left waiting in any way. Not even a wait for water to be filled or need to lift a wine bottle. They were there at every turn...without ever making us feel like they being pesky. My steak and my wife's were cooked to perfection. Petersons prides themselves on having aged beef and the quality was evident...and the chef knew what he was doing. The sides were quite yummy. And they worked well with our meal...though full of carbs...also filled with plenty of flavor. If I had to pick - I would say the potatoes we had were slightly better than lobster mac n cheese. We finished our meal and had no room for dessert. Yet still Kevin brought us 2 large chocolate covered strawberries. In the end, the meal was delight to the senses and the service and environment were the very best. Now this is not a meal everyone can afford and I realized that up front. We saved and budgeted for a month to make sure we could afford the quality we had hoped to experience. Our meal, including a bottle of wine, was $276. We both considered the experience to be superior and top notch and we added $60 dollars that brought the total to $336. It's important to know that you can download the menu and know exactly what your experience is going to cost. And I also noted that there are plenty of lesser expensive choices...

The bone marrow butter demi-glace sauce was phenomenal, the fries were fantastic and the arugula were all great. This meal was truly a sum of its parts. It was the quintessential steak frites. Its a lovely crafted and welled paired entry. You're gonna be thinking I'm over hyping this up, but I assume you I'm not.
A skirt steak is not a trivial cut of meat to cook or prepare and nor is steak frites just steak and fries thrown together with pan drippings. Its extremely hard to do well and well enough to have this be a full featured entree.
I can only wonder the amount of care that goes into their flagship steaks and other dishes if their steak frites was this good.
This place is a bit dated in someways, but it's also been lovingly maintained. This is a PRIME example of fine dinning in the late 00s. In my honest opinion it was the peak of what an American steak house could be while embracing both traditional lightings, service and moods with modern approaches to the interior design. Personally the only things I would change would be some gentle restoration of well loved and worn trim.
The service was truly amazing. I was not a big spender, but never less treated with the upmost highest standard of service.

We got seated and asked to get a different table since it was right in the pass through from the kitchen and got bumped twice while sitting there. We were told the other tables were reserved. Even though the dining room never filled more than half full throughout our meal. We also put in a reservation a week and half in advance.
We were not served bread until after we had eaten our appetizers and soup. We also did not get our drinks (Malbec Wine) until our main course had come out and we were halfway through it.
My girlfriend made a comment to our server that it was hot in the restaurant (just making conversation however it was quite hot in the restaurant) and the servers reply, "maybe stop drinking so much". We were on our second glass of wine but regardless - High end restaurant, with $50 dollar steak, I am really paying 50% of that price for the service which was poor even with a half filled dining room.
Food came out - Filet - Supposed to be Medium but mine was a little over medium well (not that anyone would know because we did not get checked on very often).
