Great first experience! The ambience is great. Mellow lofi music, well lit, creative approach. The quality was above expectations. I'm from Hawai'i, grew up fishing, and my brother is a commercial fisherman - I know fresh fish. This place does solid sourcing good quality. The rolls we had were creative. While they seemed overbearing on the menu, the flavors and textures worked well together and were balanced. Sashimi had good cross cut, very good texture. Yellowfin is my favorite sashimi and this one held up well. This isn't Izakaya Den, but easily the best spot in Foco for a nice night out and fresh fish. -1 star for smaller sashimi for the price. Personally I'd like to see 2 larger pieces instead of 4 smaller cuts. Less nagiri options, and use of mock crab. Though mock crab being common in rolls, I'd like to see real crab at the price point. Plating had some old fine-dining techniques they could do without (dots, swoops, etc.) Again, all IMO.

Food and service was wonderful, the furniture could use some refreshing though: laminate on some tables was puffing up or edge banding coming off and vinyl on some booth benches were torn. The AC was a bit strong for being quite empty. We went on a Saturday night and it was surprisingly quiet. Just one other table showed up during our meal. They have a QR code for ordering but I still prefer a printed menu, which they were able to provide when asked. We'll definitely return for the food. I'll plan on bringing my own chopsticks to save on the wasteful disposable chopsticks next time though.

Nori Maki Bar is my new favorite sushi place in Fort Collins. You can't really tell what kind of place it is from the very limited web site (basically provides just the menu and hours), so on our first visit we walked in not knowing if it was a fast-casual place or a sit-down restaurant with wait staff. It's the latter -- an upscale sit-down restaurant with wait staff and a very clean and modern decor. But the prices are very reasonable, in line with other sushi places and lower than some. The sushi is excellent and beautifully presented, many with accompanying sauces that are so good you won't want or need any soy sauce. Highly recommended!

Some things to note: Nothing but maki (rolled) sushi, other than a couple of sashimi appetizers and a few other starters. Their drink selection is definitely Japanese -- a selection of sake, a couple of Japanese beers, and a plum wine. No traditional wine or local beer. Open for lunch and dinner daily, but oddly closed from 3-4 pm in the afternoon. They really need a better web site that includes photographs of the interior of the restaurant and some of their artfully created special rolls. It would be a big selling point and help folks better understand what the restaurant is like.

EDIT: I kept my original review above from 2019 intact, but I thought I'd add a couple of late-2021 updates: They now have a very limited selection of inexpensive wine and local beer. They are now open 11am to 9pm daily except Sunday (4-9pm Sunday). The sushi is as good as ever. The web site hasn't improved - photos would be a major selling point. I am going to try to review this restaurant without sounding crazy, but that is going to be difficult because my girlfriend and I are both head over heals in love with this place. We first ate here for date night some time around January of this year, and since then have returned two or three times a month. Both of love sushi and we agree that neither of us has ever dined anywhere that compares to Nori Maki. This place has no competition in Norther Colorado. If you want to understand what's at the heart of this restaurant's success, order the sashimi. The fish is of unbelievably high quality (for any place, but especially being landlocked). The fish is somehow fresher and of higher quality than anything else you will find within 100 (1000?) miles of this here. Then, upon this foundation of perfect ingredients, the chefs concoct completely original and remarkably creative rolls that boarder on artwork. No two rolls are alike, and no single roll is like anything I've tasted anywhere else. If you are looking for the sushi experience of a lifetime, check out Nori Maki. I have no idea how this place wound up in Fort Collins Colorado, but I'm sure glad it did because it is my favorite restaurant anywhere, sushi or otherwise. Having eaten here a dozen or so times, I can confidently say that among the many other things that make this place stand out, they are consistent. On all occasions I've been to Nori Maki, I've been every bit as impressed as I was the first time. Five stars...
