To the Owner, Steve –
I’m writing this with deep disappointment. My family and I have been loyal customers of Caramba’s since 2021. What drew us in—and kept us coming back consistently—was not just the food, but the incredible service we received from your bartender, Veronica. She was hands-down the best bartender on this side of town. Every time we came in, she took amazing care of us, serving our food, checking in on us, and making us feel like we were truly valued. Her service was unmatched, and because of that, I brought my now-wife there when we were dating. I’ve also brought my mother (who flew in from out of state), my mother-in-law, my brother, and many others to enjoy meals at Caramba’s.
Taco Tuesdays were always packed—and for good reason. The food was great, and your drink, the Primo, was honestly one of the best margaritas in town.
We recently returned after taking about a month off, and immediately we noticed the restaurant wasn’t as full, even during peak hours. Veronica greeted us with the same energy and care she always brings—still working hard, still smiling, and sweating from the effort. But the food was a huge letdown. The tacos didn’t taste right, and we had to send a couple back. After talking with my family, we all agreed: something had changed. We soon learned that the original cooks were no longer there, which explains the noticeable drop in food quality. Respectfully, the food now tastes terrible.
We also noticed the Primo margaritas were served in noticeably smaller glasses for the same price. That felt like a rip-off, to be honest.
Then came the real disappointment. We learned tonight—April 23—that Veronica is being let go. I can’t express how upsetting this is. Veronica is the only reason we continued coming despite the food decline. She is the heart of your bar area and a major asset to your restaurant. Letting her go is not just a bad business move, it’s an irresponsible one.
Tonight, we ordered the Mexican pizza, hoping it would redeem the experience. It didn’t. There was hardly any meat, it tasted bland, and the pricing made no sense—$2.75 for chicken and only $0.75 for carne asada?
We said our goodbyes to Veronica, gave her a hug, and told her the truth—she’s the only reason we ever returned. With her leaving after next Friday, we will never step foot in Caramba’s again. Between the poor food, the shrinking drink sizes, and losing the best bartender you had, there’s simply no reason left to come back.

Read moreI love Carambas. I normally go there and get two orders of chicken nachos and a Mexican pizza. I asked the cashier if the carne asada fries were made liked the nachos and if the meat was tender. I was told yes to both questions. I ordered one chicken nacho, one carne asada fries and a Mexican pizza. I'm not sure what happened to this location in the last few months but it is definitely not the same quality or quantity food I used to get. My nachos were so thin you could still see the bottom of the container, it had very little cheese and hardly no beans. The fries were overcooked (not to forget to mention I watched the cook that made the fries and when they were done cooking he put some in his pocket and the remaining in my dish), my asada was tough, they forgot the sour cream and the guacamole on everything was definitely not fresh including what was put on the Mexican pizza. Read moreI was going to give this establishment a 5 star rating on their food. We were a large ordering party and each spent well over or close to 30 per group. In my order was a bowl of white menudo which was delicious. While eating it about half way through I found a dark short black hair. When I brought up my bowl of menudo to the pickup window to let them know the man working just took the bowl and did not acknowledge anything. Upon returning to my seat I did ask the waitress for the manager. The manager did come out and we spoke about the incident as I feel those in charge need to know when things are amiss. I’m sorry I’m taking another star away- I order a red beef tamale dry and took it home. When I opened it it was a corn tamale. Not okay. If your employees really don’t care about their job- fire them. I won’t go back you all struck out your 3x’s in one visit!
