My husband and I went to school in Greensboro, and I was a frequent customer of Maxie B's. When we got engaged, I was hopeful to use them for our wedding cake! It ended up working out as we decided to get married in our hometown near there. I worked with Shannon to start our wedding cake planning! We wanted to go an alternative route than the traditional multi-tiered cake, and didn't want to do a cupcake display. Thankfully, Maxie B's is known for having dozens of different flavor cakes! So we decided to do a main three-tier cake, and then have their traditional layered cakes placed on each side, as well as trays of cookies - my husband only eats chocolate chip cookies! :) Shannon was very communicative and answered any question I had very quickly. We met in person finally for a cake tasting on-site. Shannon had me send in any cake flavor requests, with her advice on what would work best with the climate of our wedding season. My husband came to test out the cookies, and my maid of honor attended to help with cake slice tasting. It even worked out that my Dad was in town for a work meeting, and he was able to join us as well! We tasted so many different cakes, and left with lots of yummy goodness! Shannon was very detailed and also told us they could color the side cakes to match our tiered cake in color and consistency! It turned out beautifully. Shannon did warn that the original desired tiered cake flavor would depend on the strawberry crop that year, so we had a back up plan. We did end up going with the backup cake - but I was so appreciative of her knowledge and concern to bring this up beforehand, as I didn't know enough about baking to even think of it! We also had a gluten free guest, and Shannon was able to accommodate with a gluten free cupcake for her to also enjoy. I was assured on our big day that everything would be perfect and taken care of, and it was! We so loved having Maxie B's a part of our big day - and my husband even tried a bite of our cake! (Before snagging a couple chocolate chip cookies). Our guests raved about the cakes, and our family has already asked when we can bring more cupcakes and cakes to town when we pass through. I can't wait to work with them again for any other confection need. This cake is not cheap and to get a slightly frozen piece to eat in the shop and then to receive her reply is poor. My husband and I were in Greensboro on Monday, June 26, 2023 celebrating his birthday with a nice lunch. Before we returned home later in the day, we decided to stop by Maxi B’s for a slice of cake based on reviews. We ordered the lemon almond cake to eat there and a slice of apple cake to take home. When we cut into the lemon almond cake, it seemed very dense. And, it seemed to be a little greasy. But, having never had cake here we thought this was the consistency and flavor of their cake. We ate half of the slice and took the remainder home. When we ate the cake the following day, we were surprised that it was so light and fluffy! The flavor was so much better. I went to Maxi B’s website and completed a contact form explaining how the consistency and flavor of the cake was when we ate it at the shop vs how it was after a day on our counter. I suggested the cake may have been frozen and that the employees should advise customers of this. Shannon Barbee promptly replied to me saying I was “250% correct in that our cakes at room temperature are so much different than when they are refrigerated.” She went on to say “Depending on when you stopped in, we most likely had pulled a cake that still had a slight chill on it from the refrigerator and it just wasn’t fully at room temperature.” She ends by saying “We hope that you will come back and see us when you are free again and try even more flavors.”. I expected at the very least an apology. But, not once did Ms. Barbee offer an apology in her answer to me. I am sure the owners do not care that we had this experience. We do go to Greensboro often. Read moreMy wife and I were visiting from New Jersey and heading to another restaurant when we happened upon Maxie B's. There was a long line that went out the door by 10-15 people. Individuals on the line explained to my wife that this is one of the best bakeries in the area. When we entered the building we saw a number of appealing cakes, cupcakes, and cookies with intriguing names and flavor combinations. The atmosphere was very vibrant with young and old, the seating appeared to be very comfortable, and the staff extremely helpful and friendly. It was truly a great purchasing experience and figured, even with the 15 minute wait, we would be in for quite a treat.
We purchased (to-go) a Five Flavor pound cake, the Pink Lemonade cake, the Hummingbird cake, Sour Cream Coconut Cake and 2 cupcakes (7-Up and Chocolate). After our family tasted all the cakes and cupcakes we reached the same conclusion...too much icing with a cake that was dry. We could not find one bakery item that was not dry and thick with icing. If you like icing, you are not going to be disappointed, the icing was flavorful and there is plenty. For the price per item, I would hesitate to recommend these items to anyone. The Pink Lemonade cake reminded me of a dry vanilla cake with pink dye and a light lemon frosting. We had similar experiences where the lack of moistness and desired flavor of the cake left much to be desired.
I have read the other reviews and it seems that many have drawn the same unfortunate conclusion. There may be other flavors that are better, if so, reviewers please share. I give 2 stars instead of 1 because of the quality of the staff and service. I suppose I would have probably given 3 stars if we would have ate our cakes there. But a key to the experience here is the product itself.
Since we plan to be in Greensboro again, we hope that better reviews will come, we will give it another try and hope for a better quality of cake and publish...
