I recently had the pleasure of dining at Chuy's and indulging in their mouthwatering Combo Fajitas, and I must say, it was an absolute delight from start to finish!
The star of the show, the Combo Fajitas, were a true culinary masterpiece. What set them apart was the unique marination process. Chuy's signature blend of Shiner Bock beer, serrano peppers, lime juice, and secret spices infused an incredible depth of flavor into the meat. The result was a tantalizing combination of smoky, spicy, and zesty notes that danced on my taste buds with every bite. The fact that they use Shiner Bock beer for the marinade added a distinct richness that I haven't experienced elsewhere.
The grilled onions and peppers that accompanied the fajitas were perfectly charred and added a lovely contrast of sweetness and smokiness to the dish. The presentation was spot-on, with sizzling fajitas brought to the table on a sizzling hot skillet, making for a visually appealing and appetizing experience.
The generous serving of lettuce, guacamole, sour cream, cheese, and pico de gallo provided a refreshing and creamy contrast to the bold flavors of the fajitas. Each component was fresh and bursting with flavor, enhancing the overall dining experience.
And let's not forget the sides! The flour tortillas were soft and warm, the Mexican rice was fluffy and flavorful, and the refried beans were the perfect creamy complement to the meal. The option to have the Combo Fajitas for one or for two made it a versatile choice for any dining occasion.
The service at Chuy's was top-notch, with attentive and friendly staff who ensured that our dining experience was nothing short of exceptional. The atmosphere was vibrant and inviting, adding to the overall enjoyment of the meal.
In conclusion, Chuy's Combo Fajitas exceeded all my expectations. From the unforgettable marinade to the delicious sides and impeccable service, every aspect of the dining experience was truly outstanding. If you're a fan of fajitas and crave bold, unforgettable flavors, I highly recommend giving Chuy's Combo Fajitas a try. It's a culinary journey that you won't...
Read moreThis is a classic Tex-Mex Restaurant. A first of it's kind in Colorado. For that thank you!
Food: During our time at Chuy's we were introduced to an excellent rendition of guacamole. Not sure what they put in it, but it did not have the dreaded onion taste that most guac has. Still unsure as to why there is onion on this planet, even more confusing is why people think it is good to eat. Now there salsa is infused with onion, unlike other restaurant salsa, this is more of a chopped version and not minced. I personally prefer the minced, eliminates the gross onion flavor in my mind the best. When it is chopped this way, it was too difficult for me to enjoy. Based on the other people in our party, the salsa was a big hit. We also ordered the queso and that was on point! For the main dish, I had the Elvis Chicken Fried Chicken with Green Chili. The main course is exactly what you would expect from this type of restaurant. Cooked well and with flavor.
Decor: There is a lot going on in here. Fish hanging from the roof, photos of puppies on the wall, metal palm trees, nacho bar from the trunk of a classic chevy, and a bowling pin. Put together a classic diner with Don Pablos and you just about have it.
Staff: I can't say enough about the staff. They were kind and quick.
Bathroom: This is the most awkward bathroom set up for a male. Not sure what the set up is for females, for that I am sorry. But the bathroom is like a long, slim hallway with urinals on one side. It only leaves a few inches between you and the random dude walking behind you. Now I went during conventional dinner time, so I was only graced by the wind of a passerby while I stood staring at the wall. It just led me to think that during "Happy Hour" when there is a lot of drinking the friendly people walking by to get to the next urinal may get uncomfortably close. This would cause me to hold it and wait until I got home.
Highlights: The restaurant is filled with some neat things. Unique shirts that can be purchased, the bathroom has one of those Dyson air hand dryers. These dryers are something else.

Read moreHuge mistake coming here. We live in Denver but did some shopping down south and got hungry. Walked in a Sunday afternoon, not too busy and got seated right away.
We sat and waited a solid 20 minutes for anyone to acknowledge we even got seated. We asked someone if we could get chips and he said it wasn’t his table and he’ll figure out who is our waiter. Finally our waiter comes, his name was Steve (or at least what the receipt says). He dropped waters, chips and salsa and at this point we knew what we wanted to we placed our order for a queso and fajitas. We only got half a basket of chips for some reason so we finished them fairly fast.
When our queso came we asked the food runner if we could get some more chips, he said he’s not our waiter and he’ll let the waiter know. 15 minutes pass no chips and no water refills. Our waiter is chatting with the hostess and fooling around, tried flagging him but he would avoid us.
Food runner came back with our fajitas and we never got chips. Our queso just sat there cold. We asked him if we could please get some service and he said it’s been a hard day for everyone and service has been slow. Our waiter is having shots at the bar and playing around. I would be more sympathetic if he was running around being overworked. Food runner gets us plates and some chips. Waiter never comes to our table.
At this point we can’t even enjoy our food, we poke at it and just want to leave. Waiter comes to drop the check and ask if we wanted dessert. This is the first time he comes back since he took our order.
We asked to talk to the manager at this point since I wanted to tip the food runner and not our waiter that would make eye contact with us and avoid us. Manager is very apologetic, removes the queso out of the bill and makes sure our tip gets to the food runner.
Such an uncomfortable, bad experience I don’t think we’ll ever be back. Sucks since the food tasted good but it was just overall ruined by the...
