incredible all-around ramen experience for a very wide variety of palettes and budgets! the whole setup is very efficient and utilizes the dining hall setup well. the location of things makes sense, and there are all sorts of customizable options for differing tastes, even a hot water spout for tea or if broth is too strong! the pork belly, oyster mushroom, and tonkotsu broth ramen that my boyfriend had was sinfully delicious. mine was beef and mushroom broth; the beef was a tad dry but highly flavorful, and the mushroom broth was simple but also very flavorful. there is a hot chili blend available for extra spice, as well as a dish of salt for if you prefer it to be saltier! the prices were also good for the amount and quality of the food received. we also had the japanese purple sweet potato cheesecake, and it was like a delicious and edible play-doh! overall an excellent dining experience and i will be happy to come here again in the future! i would attach a picture of the ramen but it was too good and we ate...

They handled the opening chaos very well, and took a lot of lessons from it. I'm not reviewing their open, opening day sucks for everywhere and you can't really represent an establishment from their first day.
That being said, I can represent their commitment to improvement: the food and service was good on opening day, but it was a distinctly improved experience a few weeks later, which shows that this place is capable of adjusting to improve!
There is also a commitment to quality, I witnessed a staff member (the owner?) pull all of the sesame balls and remake them on day 1 during a high stress, high demand period because they didn't taste up to standard!

Bok choy was brown and partially frozen, and the pork belly had been in the warmer for far too long and was completely dissolved into small bits. I love that they support local food producers and farmers. Overall, decent ramen for the area. I’ll probably be back. The building used to be a dining hall, and it negatively affects the experience in my opinion. Nothing the owner can change about this, but be aware that this is not somewhere I’d come for a date night or nicer meal.
