We have been staying at the Waikoloa Village Hilton for the past week and Roy's restaurant came very highly recommended by one of our close family friends. On our first night in Waikoloa Village Hilton we stopped by Roy's for some late night appetizers and drinks and had an exceptional experience we will remember and cherish. We did not have a reservation but the hostess (named Ro) who promptly greeted us was more than happy to offer a choice of a table for two in the dining room or a couple of seats at the bar. We chose the bar since we only planned on having a quick appetizer with a couple drinks and maybe a dessert. The bartenders (Lurch and Ryan) were extremely knowledgeable about Roy’s food and drinks. They helped us pick an appetizer and paired it with a couple of cocktails. Lurch was happy to answer our numerous questions about Waikoloa and the surrounding area while he made our drinks. We had a great chat with him during our entire Roy’s experience. The appetizers were there before we knew it and we excitedly ate every last bite quicker than we expected. They were so delicious we decided to split an entrée. Ryan recommended another dish which we ordered and he again paired it with another set of drinks based on our preferences. The entrée was as amazing as the appetizer and at that point we had to order a dessert. They kindly note on the menu that the soufflé preparation takes 30 minutes and at this point we were more than willing to wait. We ordered a soufflé and while we were waiting the manager Brian came by to ask us about our experience and we told him it had been an exceptionally warm welcome to Waikoloa which would be hard to top during our 9 day stay. He offered to take a reservation for the following week if we’d be interested and we gladly accepted and scheduled a full dinner date two days later. I won’t go into the details of our 2nd visit except to say that our expectations were exceeded yet again and our server Lei gave absolutely flawless service the entire evening. We ended up bringing friends in for late night dessert and drinks only a couple days after that and had another amazing experience. We tried two other restaurants in the area during our visit and were very disappointed. During your visit to the Waikoloa Village Hilton Roy’s is a must dine restaurant. I promise you will be making a second reservation after your first visit and wouldn’t be surprised if you ended up spending 5 out of 8 nights at their wonderful restaurant as we did during our visit! THANK YOU ROY’S! WE WILL BE BACK...
Read moreHaving had a lovely experience at the original Roy's in Hawai'i Kai I had to try this location on the Big Island. Wanting something a bit different, I went with the chef's tasting menu. The scallops were ideal, tender and creamy; the subtle salt of the cucumber and daikon contrasted nicely with the sweet scallops. That strong start may have been my favorite part of the meal. The salmon was a solid followup; though the buttery sauce was a bit separated around the edges, I delighted in its gentle kick. The roasted cabbage presented beautifully, however some peapods were a touch too crisp still. The third course--wagyu skirt steak--was the weak link 'cause skirt steak is supposed to be a lean cut so I was surprised that it was a bit fattier than I expected (mind you, wagyu is not synonymous with Kobe!). The veggies salvaged this plate though; I love carrots but I'm not usually a fan of sweet potato but it was roasted exquisitely, with the chimichurri providing a savory aspect to counter the sweetness of the root veggies.
My companion ordered his favorite, the meatloaf, which he reported was just as tasty as the original. He didn't see his veggies at first but they were just hiding under the mashed potato.
Our server came by with dessert menus before my penultimate course and before my companion's main even arrived! We were confused for a moment 'til he realized his error. Despite a chocolate decadence cake being included in my prix fixe menu, we were comped a chocolate soufflé likely due to this minor mistake.
I think it's important too that I highlight the outstanding service from our busser Oshen. It was slow towards the end of dinner service, but he was always prepared with refills of water and tea. He was personable beyond the usual pleasantries. He made us feel taken care of throughout...

Every single dish that I had the pleasure to taste was nothing short of a gastronomic delight. The campachi, a flavorful appetizer with a delicate texture, was a great introduction to the rest of the sumptuous meal. The highlight of the evening was the Big Island abalone, a local delicacy that showcases the chef's attention to detail and commitment to sourcing local. They served it with squid inked risotto and it was so delicious. To top it all off, we has a yummy lava cake dessert and refreshing cocktails were served to finesse my unforgettable dining experience.
