Honest Coffee Roasters became our morning spot while visiting Huntsville.
The vibe is chill but vibrant, organized but busy. The staff handled a really busy crowd with ease.
During our visits we tried the vegan breakfast burrito, kona açaà bowl, breakfast sandwich with tomato and avocado added, vegan breakfast bagel sandwich, and nitro cold brew.
The aƧaĆ bowl was probably the best we ever had anywhere! Piled with fruit and really good honey. The consistency was perfect and didnāt turn to soup like at some places.
The nitro cold brew was balanced and smooth. The size was good for the price too.
The breakfast sandwich was good but didnāt seem like a sourdough like the menu depicted. That was a bit disappointing but pretty good flavor overall.
The vegan burrito was pretty tasty but a bit on the small side. The salsa tasted store bought so it didnāt really contribute to the good flavors of the burrito. When I added avocado for $1.50 it was served with a 1/4 of an avocado (about an inch and a half of meat on the side).
Unfortunately I found the vegan bagel sandwich absolutely awful. The ācream cheeseā tasted like coconut oil and was applied way too thick on the sandwich. The taste and texture made the whole thing off putting. There are a ton of wonderful vegan spreads you can buy in store or easily make. So why they were using this spread was unknown. The vegan egg and sausage were also the worst Iāve had. I regularly eat beyond breakfast sausage and have had other brands too (MorningStar and Impossible) that are delicious and would have been better options. When I donāt eat eggs I will eat JustEgg and find their product delicious. Iām not sure what they were using but it was so dry and sad looking. I would recommend serving different brands of substitute products (sausage and egg) or completely reworking this menu item all together.
Overall we liked our experience here and it seems to be really popular with the locals. Caleb took our order both days and was a very genuine and knowledgeable human. We were happy to have them as our person of contact for ordering. We may be a bit spoiled by our coffee shop food in St. Louis, MO so that likely plays into the review.
Either way, this is a good stop for all day food and drinks. Price point is a bit higher than the quality and execution dictates but they keep a lot of staff on one shift so...

This is a really cute little shop in downtown Huntsville. Parking is difficult, but that's true everywhere in that area, so it's not really their fault. It was a short walk away from where I finally found a spot. They were quite busy for ~11 AM on a Thursday.
The two men working at the counter were very friendly and welcoming. The person ordering ahead of me had never visited before and wanted guidance on what to order, and they were great with her. I ordered the BomBom açaà bowl, which comes with granola, strawberries, bananas, cacao nibs, almonds, and a honey drizzle. I meant to remember to add peanut butter, but I forgot. Drats.
At any rate, my bowl came out in a reasonable time frame and I settled by the windows to eat it and people watch. Overall, it's a pretty good bowl. Still not close to my favorite açaà bowl place ever, but much better than the other option in town that I've tried (Clean Juice).
My main complaints: the topping ratio is off -- for once, not enough açaà and too many toppings. Looking at the bowl, the açaà seems generous, but it's mainly caked around the edges of the bowl -- the center was hollowed out and filled with granola. My final few bites were pretty much just granola, which was tasty...but I really like the açaà purée to bind everything together. Also, the açaà was still very hard and icy. I know lots of people store it that way, but I wish it had been softened somehow. Also, very minor nitpick here, but the banana was cubed, and I think it's better sliced. I also found a very small, dark, fine hair on one of the banana pieces. I'm really not the type to freak out about that stuff, so no big deal, but worth mentioning.
Strengths: the almonds and honey were delicious additions. The granola was the right amount of sweet, and the strawberries tasted good despite not being in season. Also, once the açaà melted a bit, it had a pleasant sweet taste and creamy texture.
So far, this is my favorite place to get an açaà bowl in Huntsville. I would definitely eat this bowl again whenever the...

Traveling through Huntsville on December 14th and stopped at your coffee spot. The decor is welcoming and your staff are super friendly and professional.
I have two gripes.
First. I saw on the menu you had drinks with sweetened condensed milk. I asked to order a coffee with an espresso shot and sweetened condensed milk, basically a Vietnamese coffee. I was told that was not possible. This was perplexing because based on my exchange with the barista, all ingredients were on hand individually. I asked in a couple different ways how this drink could be made and told it could not. The person handling my questions was very kind about it. It was just so puzzling to me why this drink could not be made. At one point, another staff member piped in saying something to the effect, āWe canāt make it because of direction from the higher-ups.ā So I concluded it was a policy issue and then resigned to ordering a cappuccino. Why would making such a simple drink with non-exotic ingredients on hand be forbidden? The cappuccino was good.
Second gripe. Halfway through my cappuccino I ordered a smoked salmon bagel and paid extra for the pickled onions. The onions were there but not pickled. Since it is a cost add-on for the customer, it should at least be what is claims to be. I suggest serving the salmon bagel open-faced. It would present better and be more enjoyable to eat.
