I walked in today around 11:40 am and to my surprise found one of my mentors working the floor of Los Carboncitos , his name is Alfredo if you are looking for excellence in service come find him! Got seated right away by a young lady that was the manager there is no way at such young age you can command a restaurant of this caliber I hope she proofs me wrong and not me but ownership that put their trust in someone so young I have been doing this 40 years and I am still learning, This type of Mexican food is hard to execute and when is done right you've got yourself a gem but you need a whole lot of people to put it all together, this is not Aurora or Denver they expect and demand good food and service, Mezcalita was very good, Michelada was good, chips and salsa were good to but why would you need a full tray to bring chips and salsa slows the service a lot , Pastor is my kryptonite and they have a pit back in the kitchen their tacos were very good I would come back just for that, lamb leg was delicious, it is going to take them time to get all wrinkles iron out but if they pull it all together is going to be interesting and it can be amazing good luck and rely on the people that know the industry inside out!!!!! This was my 4th visit and probably my last every time we came back food and specially service has been on a decline and like I said this could be a gem but there is no one sailing this boat and hopefully they will make it but if they do not improve the service this is going to go down bad( lots of people depend on a restaurant) but it does seem management is there to kind of control employees and there is no engaging your #1 priority your GUEST asking how the food was or your drinks or the service which has become very slow and hard to obtain, I had the tacos al pastor which were very dry and luke warm, my cadillac was good I wanted another one but never offer one or ever came back to the table the waitress was having dinner, it took forever to get the check and there were only 3 more tables. Read moreThis is our second time here and we are currently the only customers at 5:00 on a Saturday. I know, a little early, but Brothers Bar across the street has a ton of people and I guarantee you los Dos is packed right now.
I feel the food is definitely more authentic, and much more spicy, but we think its good. Food and drinks have been good both times.
BUT... there is a few things they need to change or they are not going to make it and we will have another restaurant here soon:
The first thing that you see when you come in are a bunch of employees sitting around and a sign that says you'll be charged 3% extra if you use your credit card. Not very appealing. Also, you get very worried when you walk in and you're the only customers.
Don't advertise draft beer on your menu if you don't have draft beer. And there is no happy hour.
Service and atmosphere could be better. Prices are typical of lone tree area for 2025...a bit too high like everywhere right now. Charged a lot for every little extra too. $13 for 2 extra tortillas, sour cream and a Jalapeno. $85 for 2 with 1 margarita each.
When you only have one couple in your restaurant on a weekend dinner, don't you as the owner/manager come by and ask him how everything is and see what they can do to improve.
