This is just from one visit, but it wasn't a very good experience. First, Pros: Good atmosphere (I'm not from Texas, so I enjoyed the Western style), nice staff, and good sweet tea. Cons: I ordered a steak (12.99) and it had no good meat flavor. It tasted like a McDonalds burger whipped on the floor (I have tried that unfortunately). It also had a very distinct manuer aftertaste, so overall it just tasted horrible (I had a steak at the Big Texan (not in Lubbock) and a few other steak houses in Lubbock, so I don't think this kind of manuer flavor is just unique to Texas). To make up for it, they did get me a burger, which was pretty good (even though it was obviously just a heated up frozen paty, like at McDonalds), though for the price (8.99?), you could get a more flavorful burger at McDonalds for less.
The steak thing didn't get me too upset, but what did get me upset were the hidden fees. For example: water was $1. Why do you need to charge for that, especially without telling the customer? You can get free water at the Rib Crip across the road, and at Dickeys (Two other "Texan" restaurants I went to that come to mind). Also, the chips had cost $3.50, but the dip, which was recommended by the waitress (without telling us the price), was $6. So we paid $9.50 for freaking chips and dip that would be free in most Mexican restaurants.

My friend and I went to the Caprock on 82nd and ordered a flavored chilton; which they offer. She asked for a “strawberry” chilton and they said they can’t make it. We asked why politely, because they do offer grapefruit flavored chiltons. They stated that they didn’t actually have any way to charge us for a strawberry chilton. So we asked did you mean you can’t make a strawberry chilton or you can’t charge for a strawberry chilton? They again stated that they cannot charge for a strawberry chilton. A short backstory; myself and some friends patronize this location and spend significant amounts of time and money at this location. So having this relationship with the location we felt comfortable asking for a drink that they clearly were able to make but the server wasn’t accommodating. We then asked for a manager and asked them if it was possible and of course the manager backed up the server and refused to accommodate us as well so we left. The event left us disappointed to say the least and decided to leave Caprock and move our celebration to “Back 40” on 98th. We walked in and asked if we could get a strawberry chilton. They said let me ask and they said sure and accommodated us without any fuss or complaint about their ability to charge us. I believe we’ve found our new spot. I was very disappointed to learn that the Chicken Fried Chicken that was listed for $9.99 online was in fact $12.99 once we arrived. We decided to try it anyway and I brought the discrepancy up with our waitress. We did not expect much to come of it, but were very pleasantly surprised when the manager came over and offered us a discount and apologized for the confusion. It's been a rare experience for us in Lubbock to get any kind of response to an issue.
As far as the food, I feel like the Chicken Fried Chicken was decent but I can definitely understand why some people might consider it lower quality. I personally enjoyed it and think the portions were decently balanced -- but I say this with the $9.99 price point in my mind. At $12.99 I think it's considerably overpriced for the quality and is going to have a hard time competing with other establishments that offer a bigger hand-breaded chicken at the same price.
I wish there were a bigger selection of sides -- as someone who can't eat most vegetables this is true of almost every establishment for me, but it would have been nice to have at least seen something like mac & cheese as an option.
My dining partner ordered the Queso Taco Beef Burrito and enjoyed it. It was a very good amount of food for the price and the quality was also great.
