We just attended the bluefin tuna cutting experience at Sora, and overall, it’s a unique but mixed experience. The experience is priced at $125 per person, which came out to $272.50 after tax for two people. We also spent $33.80 on one cocktail, one mocktail, and a bottle of water, bringing the total to $306.38.
For that price, you get to watch a whole bluefin tuna being broken down by a showy sushi chef posing for the cameras. The visual aspect is impressive and great for anyone who hasn’t seen it done before.
When you arrive, you’re greeted with an included glass of sparkling wine, but keep in mind there are no included non-alcoholic options. They also serve a couple of appetizers before the main event, like salmon hand rolls and salmon on actual saltine crackers. The appetizers are pretty basic and not particularly memorable.
The main event, the tuna cutting, is fascinating, but the environment can get quite chaotic. Unless you pay extra for a reserved table, you’ll be standing the whole time and have to jostle with other guests for each piece of sushi. Guests who pay for tables get large plates of sushi delivered directly to them, which makes a huge difference in comfort and the overall experience.
The fish itself generally tasted great, but there’s a range in the cuts you get. Some pieces are the rich, fatty tuna you might be hoping for, while others are leaner and less flavorful. It’s a bit of a gamble with each serving. Also, because general admission guests have to search on their own to find plates and chopsticks, many end up using their hands to grab sushi. That might be a concern for anyone who’s particular about hygiene.

I had the privilege of dining at SORA by HC last night, and it was truly an unforgettable experience! From the moment I walked in, I was treated like family by the exceptional staff, particularly the owner, chef Bee who went above and beyond to ensure my evening was nothing short of perfection.
The omakase experience was sublime, with each dish carefully crafted to showcase the freshest, highest-quality ingredients. The culinary journey began with decadent caviar (on special for Wednesday) , expertly paired with a delicate mother-of-pearl spoon and truffle chips. It was a masterclass in textures and flavors!
Throughout the meal, chef demonstrated incredible skill and artistry, presenting each dish with precision and flair. The sushi was, of course, the star of the show – each piece a delicate balance of flavors, temperatures, and textures that simply melted in my mouth
What truly set Sorabyhc apart, however, was the exceptional service. Chef Bee was warm, welcoming, and attentive, taking the time to explain each dish, answer my questions, and share stories about the restaurant's history and philosophy. The staff were equally impressive, anticipating our every need and providing seamless, attentive service throughout the evening.

Yesterday May 13, My Husband, a couple friends and I went to the Tuna ceremony. They charged $125 per person, which included a glass of champagne, and " unlimited" sushi, sashimi etc...
When we arrived the atmosphere was nice, we took a picture with the Tuna, and everything looked good, until we walked inside, and realized we had been charged for 4 people a total of $550 to literally be standing up the whole time, waiting until some girls passed by and hopefully had some food left we could grab... to then be standing in a super hot crowded room, watching the Tuna Ceremony from a TV screen because there were too many people in front of us.
The funny thing is that to be able to sit down we had to consume another $500 on the table, so $1000 for the whole thing...
The only good thing about this trashy event was the guy in front of us, that was kind enough to pass a plate with the tuba around so the people that were behind could eat it.
We literally left to another restaurant which I highly recommend " Double Knot" were we did spent $500 but it was well worth it!!
I will suggest you change the layout and do the Tuna Ceremony in the middle while you have people SITTING around watching. And if you won't provide seats and a good view, at least specify it on the event...
