Bubbakoo's burritos feels like it belongs in a mall food court as a neat gimmick rather than a burrito spot. They offer a lot of variety on their menu, but the quality is completely average. The tortillas feel like the same type of flexy, chewy, long shelf life ones you'll find at Taco Bell, and their meat didn't have much flavor, but it wasn't bad. One item I liked a bit was the "Chiwawa Burrito" one of their unique gimmick items.
The staff was normal and respectful as you'd expect anywhere else, and the place was clean and well lit.
However, for the quality of the food, it's not much different from Chipotle which is a bit cheaper and down the road. If you want a slightly more expensive burrito made fresh that's local, Baja Tacos is also a minute away and certainly tastes better. Heck, if you want wings, their neighbor Bon Chon has that, too.
So why go here? I'm not sure. But my impression is that Bubbakoo's cares more about it's image as a "different," "skater/surfer," "hip and modern," burrito spot that it forgot that the has to be tasty, not just "unique."
As an aside, someone who I could only guess was the manager sat down a few tables from me and watched me eat my food, which was a bit weird. He seems to have wanted my opinion as he asked me after I stood up to leave (which is fine), but I wish he didn't watch me from another table.

The rice I got was the white rice with cilantro. The rice is very wet and mushy. There should be a good medium between dried out rice and cooked rice and it is nowhere near it.
