Wow, let me say that again ... WOW ! This place was awesome! To properly laminate dough and shape into a French pastry is a real art and they have it down. The lamination was perfect. The butter croissant was flaky and delicious. It's the real test of lamination in my opinion. We shared a variety of pastries and all were delicious. Pain au Chocolat was great. Again perfect lamination and high quality chocolate. My wife's favorite was the Orange marmalade filled Kouign Amann. It was small but bursting with flavor from the orange and sweetened laminated dough. My favorite was the Key lime Cheesecake filled Danish. It was a complete flavor bomb! As is the case with many places I'm thrilled about, I was so taken with Bearcat Baked that I forgot to take pictures. However, I can tell you that Kelsey at the front counter was delightful, engaging and helped me pick out some culinary delights. I ordered a sausage egg and cheese croissant that was among the best sandwiches that I've had this year, a slice of their coffee cake, play double chocolate cookie can a red-eye cold brew. Mike the barista imparted some coffee knowledge upon me as I was awaiting my order. And whoever is making those cookies deserves a substantial raise. I was visiting New Orleans and went in to try this new bakery. The almond croissant was great but the caprese bread was little underdone. I am giving 4 star because of the service. The guy serving was very nice and courteous but extremely inattentive to customer’s orders. I asked for a chocolate croissant and a blueberry muffin. He gave me a chocolate croissant and an almond croissant instead. I was not paying attention and hence discovered this after reaching my airbnb. Also, I bought a bread and he gave it to me in a box but didn’t close it.
