The employees at Colson are wonderful, warm, and thoughtful people who have brought so much joy to those of us who live in the neighborhood - and they deserve better.
For the past few weeks, the AC at the Industry City location has been broken and the higher ups at Colson refuse to address the problem despite multiple formal requests from their staff. To clarify, I am not an employee, just a regular who has become disheartened seeing those who are working become gradually more overheated and discouraged. According to one of the baristas, temperatures have reached up to 86.9 degrees in the past few days and Colson still refuses to fix the AC "until next summer." One employee was even sent home in an alleged act of retaliation for filing a complaint with OSHA.
In light of these recent events, I will no longer be purchasing anything from Colson, including pastries delivered to their various participating locations, until this issue is adequately handled. I will, however, be checking in with the staff regularly in the hopes that they will receive the attention and care that they have continued to give their patrons despite the inhumane and unconscionable treatment they have received from...

It took me a few passes to realize I could park under the elevated train using the NY park app. Once inside the space is very small but cute. There is no where to sit. But they have a good variety of sweet and savory treats. I got there around 9am and the fridge was mostly empty but the bakery case was still full. Read moreWe tried the pastries from Colson Patisserie a couple of months ago when we visited Nhà Mình, a great Vietnamese restaurant in Ridgewood. We were impressed by the delicacy of their pastries, so we planned to visit their location in Brooklyn.
The decor is adorable and simple with lively ambiance. Customers can enjoy watching how they bake their goods via huge windows. We were there about noon and lots of pastries already ran out, which was kind of disappointing.
