Roebling Pizza is the platonic ideal of a NYC slice shop. It is unpretentious with great style and craftsmanship. The owner makes all of the pizza dough in-house (in case you didn't know-- most nyc slice shops nowadays buy theirs from a mass distributor) and you can watch him pull the dough, meticulously pop air bubbles, and diligently ladle the perfect amount of homemade red sauce on top.
I believe every slice shop should be judged on their plain slice. How does their pizza hold up when there is nothing else there to distract? Roebling's plain slice is more than worth the very modest price tag--- the dough is chewy and crunchy in all the right places with a nuanced yeasty sour kick, the sauce is tangy and meaty, and it is always served to you at the perfect level of crispness.
The special pies rotate but he keeps it simple, staying true to the neighborhood slice shop ethos: a white pie with spinach, ricotta and garlic confit; pepperoni; meatball; and some rotating specials. Nothing too frilly or over-the-top. He will gladly add toppings per request. And he always has one experimental pie based on an R&D process-- on my visit I got to try the Ancient Tomato pie, a slice with just marinara sauce, fresh tomatoes, olives, and basil and a super crisp dough perfectly juxtaposed by the thick layer of tomato sauce.
Last but not least, the ambience is delightful. The signage is vintage (1960s), local art on the walls, groovy jazz tunes playing, little plants over the fridge, a large communal wooden table, and a rotating cast of locals making conversation, expressing strongly-held beliefs, or laughing and having a good time in an exchange of witty banter...
Read moreThe newest owner of this place is a foodie/artisanal food world snob, he's snooty, condescending, openly sarcastic & subtly insulting to customers, thinks he knows more than everyone who sets foot inside here, & boy he's gonna let you know that. He's a total jackwagon, not any fun 2 try 2 interact with when yr hanging in his establishment. On top of this, his product his simply not all that. It sure LOOKS amazing when you 1st get there & see that day's pies on display, & he in his unfriendly, haughty tone impatiently tells you what's on each one, & he makes sure 2 condescend to you about how special his crust his, blah blah..but the ultimate test is simply how any chef's product tastes, presentation & appearance mean nothing when the product is as bland & flavorless as his slices are. Yes, even when he shaves special cheeses by hand on top of slices post-warming up, comes up with novel twists on traditional toppings, etc, taste of his product is NOT impressive & his supposedly amazing dough has no flavor either, bland & forgettable. The previous owner knew how to make great tasting dough/crust, this guy doesn't. It's a charming little place because it's been there since 1960 so has an old-school, tiny snug neighborhood place vibe about it, but yr not gonna have any fun trying 2 interact w this guy while there, & as hard as it is 2 believe from 1st appearances of product, it's lacking in any real transcendant impressive flavors, boring stuff. Roebling Pizza is very much a neighborhood pizza spot and isn’t pretending to be anything else. you can rest assured the pizza here is good bc the pizza is for the people who live in the area…it is NOT relying on gimmicks, empty social media / influencer antics, and other forms of trickery to create illusions of grandeur.
stopped in here and thoroughly enjoyed a plain cheese slice. the pizza is a cross between a classic NYC pizza and Neapolitan pizza. my slices was served hot—and did not disappoint. the airy crust was thinnish but firm with some chew and crunch. this crust is where it’s at! a good layer of flavorful of sauce—that has careful balance of savory seasoning with a touch of a sweetness. the mozzarella cheese is nice and melty without being thick or stodgy. the pizza is a definitely made with quality ingredients—-how do I know? because quality ingredients have simple flavors that really sing through and that you can taste in each bite. also quality ingredients don’t give you a food hangover post-eating…which is a win in my book. plain pizza slice, $3 + tip
