I work in the area and think we have very poor lunch options. I stopped into Simply Noodles yesterday after work because they are very new and I was curious, and I was surprised that there was a big sit-down section with table service. I ordered the Kimchi noodles with pork chop to go, to take home for dinner.
The noodle soup was FANTASTIC! Great portion size and it was great that they packaged the noodles separately, which is their speciality. The noodles were clearly freshly made, springy and toothy. Not at all mushy. The broth was intensely flavorful and the mix-ins were all fantastic - corn, lots of kimchi, wood-ear mushrooms, and a couple fried tofu puffs. The pork chop was a little dry, but a nice size for the price and well marinated.
I cannot wait to try all of their noodle dishes and some dim sum, whether lunch or dinner. I am so excited that they've come to the Bryant Park neighborhood and really hope...

Now let’s talk about the Truffle Soup Dumpling—aka the little pocket of joy that changed my life. It comes as part of the Rainbow Dumpling plate, but honestly? I went full gremlin and begged the waitress to bring me three more on their own. I’d rank it in my top 5 dishes ever—and that includes meals I’ve had on birthdays, vacations, and suspiciously fancy weddings.
The truffle flavor is dialed in perfectly: rich and earthy without hijacking your tastebuds. Then there’s the soup inside—liquid gold. And at the center? Ground pork mixed with minced truffle, just chilling like it’s no big deal. Absolute perfection. 10/10 would embarrass myself...

I generally do not go to openings in the first three to four months. Within the first month this restaurant is already taking off with perfect service and well crafted dishes that look like they are hand painted myY a master artist. The unami taste of the mushroom salad is a palette pleaser that makes you want more. Then we had the ramen and scallion noodles. Both unique twists that did not stray too far but just enough to make for an interesting epicurean adventure.
