It's amazing the experience that food trucks can provide compared to modern day restaurants.
OG's is some of the best barbecue you're going to find in the region. I ordered their three meat plate, which consisted of tri-tip, ribs, and smoked sausage.
While the Pacific Northwest is not known for barbecue, I think the man behind this outfit may be onto something.
His beans and potato salad are not fillers. They are real recipes, and are great sides.
Let's get to the business: the meats!
We could talk about how barbecue around the country is varied from one another. In our region, we've never been able to establish good barbecue, let alone our own signature.
But OG's may be onto something. First, they use a decent amount of sauce, but it's not smothered. And they smoke their meat that seems to reflect very specific goals.
The result is barbecue flavor that is not overly sweet, nor overly smokey. It's not overly tangy. OG doesn't rely on one type of flavor profile to make their plates.
Instead they balance their flavors and what you get is very delicate flavors that don't overpower.
