What more could you ask for in a patio restaurant/bar along the sunny streets of downtown Palm Springs? Maybe youāre drawn to the live music like a moth to a flame after walking Palm Canyon aimlessly, hungry for a satisfying bite. Of the TB Marlin Bars Iāve encountered, by far PS offers a superior downtown location you can walk right into and have a drink in hand within minutes. Perhaps after parking in the nearby structure. It's a laid-back outdoor space complete with umbrellas, mist on hot days, and heaters on cool evenings. Itās where to chill in the desert!
Food/Drink: Besides when hunger strikes, my favorite meal is a happy (hour) meal. For the Marlin Bar, thatās 3-6 PM daily. No reservations needed; just follow the signs and order at the counter before securing your table. While āisland timeā (happy hour) may not include food, there are plenty of snacks on the menu to share with the table, like the World Famous Coconut Shrimp, the (spicy) Crispy Chicken Wings, or the 808 flatbread with its sweet heat. While visiting, both sister and niece requested we dine in a second time they enjoyed the atmosphere and food (Grilled Chicken and Mango Salad, and the Ahi PokĆ© bowl).
Vetted cocktails include the classic mojito, gin martini (ask for the blue cheese olives!), cucumber smash, and the ever popular signature frozen cocktails (mai tai and piƱa colada). Like it so much you want the recipe? Peep the website for recipes and cocktails!
Service: On it! The collective staff of smiley servers all work together to accommodate customers. Should you wish to order additional items, refill a beverage, or close out your bill; simply smile and wave at your nearest server. Thereās no need to leave your seat or return to the counter! In my experience, the kitchen and bar have food/drinks on the table within 10-20 minutes, or less. Outstanding service PS TB team! Well done.
Ambiance: What I love most about the casual corner of Tommy Bahama Palm Springs is that The Marlin Bar offers a relaxed refuge where you can unwind with a cocktail, light fare, and chill out with LIVE music from local musicians, 5-8PM daily (weather permitting). Did I mention they accommodate four legged friends too? With ample seats both inside and out thereās a place for everyone at Tommyās.

We are from out of town and happened to pop in impromptu this afternoon after being intrigued by the live music and the vibe when walking by. We had such a great time that when we were going to be meeting up with friends, also from out of town, later in the evening we suggested we come back here. Itās about 5pm when we show up, very busy but we saw a couple tables available so still walked in - the same way we did in the afternoon - which was by walking up towards the bar to order and then you sit down and they bring you your food. Next thing we know someone who works there (a host?) comes erratically yelling and literally flailing at us as if weāve broken some law, pretty much shoving us out and Iām not even exaggerating - he knocked the heat lamp over onto my husband because he was being so dramatic! (And thankfully didnāt knock it onto me whilst I was holding my baby in my arms but not to mention thankfully my husband didnāt get injured or burned). I guess there is or was usually a sign that says please wait to be seated but it was off to the side, like why would we push that aside and walk past we arenāt ignorant entitled jerks like this employee was behaving as, screaming at us about the sign that was nowhere to be seen by us until he grabbed it and put it where it ābelongedā at that time of day. Like⦠simply telling us there was a wait would have sufficed lol. We werenāt even demanding to sit down or anything, just showing up exactly how we did earlier in the day⦠Anyways, Tommy Bahamas I hope you can talk to your host that was working around the 5pm hour about customer service because that was literally insane. I tried the Filet Mignon Tacos withĀ street corn salsa, chipotle aioli, island slaw, feta and guacamole; the All-American Sliders with American cheese, house-made pickles, BBQ ketchup, garlic aioli, lettuce, red onion, and tomato; and lastly the Buffalo Cauliflower Bites with cajun crust and herbed buttermilk dressing.
The tacos were presented beautifully. The corn had been sliced directly off the cobb, with sprinkled feta cheese. The meat was rare, extremely soft and tender, unmistakably filet mignon.
The beef of the sliders, cooked to a nice medium rare, was tasty and topped with cheese and capped with fresh red onion on a brioche bun.
The star of my lunch was the Buffalo Cauliflower! It was crisp-tender, deep-fried with a beautiful golden breading. The coating was substantial, but not too thick. You could taste the cauliflower florets.
In my excitement I dropped a single piece of cauliflower on the floor and my server Brian noticed and took immediate action. Within minutes I had an entire new order of cauliflower which I gleefully accepted.
I would recommend this establishment to anyone in the area. I was shopping next door at the Tommy Bahama Resortwear store and after my purchase I mentioned that I'd be dining on the restaurant side, so the cashier called over and had a table prepared for me in advance.
