Happy to see another Happy Lemon location open up! You might think that Happy Lemon would be a lemonade shop based off the name alone, but it's actually a bubble tea chain. However, what differentiates them from other chains is their drink variety (most notably, their salted cheese foams and lemon specialities)
I went during the grand opening. As expected, the wait was rather long, but the drink quality was just as good as I remember from the Richardson location.
My thoughts on the drinks I tried: (100% sweetness, no adjustments)
-Dragon Fruit Lemon Slushy: great refresher for the hot Texas weather. It has a nice consistency with just the right amount of lemon tartness.
-Ube Milk Tea w/ Taro Puff & taro balls: SO good. My sister who didn't know what Ube was said the drink reminded her of cookies and cream. The Taro puff tastes like the puff cream that goes with the bubble waffles
-Fresh Passion Fruit Mango Green Tea: good flavor, not to sweet, wasn't a fan of the fruit seeds inside though.
-Mango Matcha Smoothie: nice consistency; mango and matcha flavor complemented each other well! No grainy-ness from the matcha
As for the interior, the Plano location isn't as spacious as the Richardson location, but it still has the signature yellow with the Happy lemon mascot across...

We waited 10+ minutes even though not many people were in store. When I got my tea, all the lemons were just cut into cubes and floating in my tea. I asked the girl staff and she told me the guy staff forgot to use the blender. They did not immediately fix it for me, but took care of other people’s drinks first, which is fine. Then I got my blended tea, but it tasted so weird. I must have ordered this same drink for 20+ times, and it absolutely tasted wrong. It tasted like salt water mixed with lemon, all bitter and sour. I doubt that she put sugar or even tea in there. I had to go back and tell them the drink tasted weird, but the two staffs did not offer to redo my drink and rolled their eyes at me with very weird smiles. Although the bubble waffles are side items (the drinks are the stars of the restaurant), they were cooked correctly, crunchy on the outside and chewy on the inside. We ordered the chocolate and matcha flavored waffles. Both weren’t too sweet which is perfect to eat on its own or with the dipping sauce.
