Hruska's Kolaches is a hidden gem in Provo! I walked passed it several times and didn't notice it at first. Luckily someone recommended it and I gave it a try.
Here's the thing. They are only open limited hours and they only make so many so get there early. You can usually go first thing in the morning without much of a wait, but just know Saturdays are crazy! Get there early if you want the best selection.
They offer sweet and savory Kolaches. The sweet ones are tasty, but the savory ones are my absolute favorite. They are super filling and it's like getting a whole meal in a convenient, portable bun of goodness. I have tried every savory flavor and they are all good in their own way. However, if you want to knock your socks off, try the pulled pork and the La Bomba Carnitas (the carnitas are only offered on Saturdays). They are AMAZING! They sell out fast, so get their early. I also love sausage gravy one and the egg, cheese, and ham.
The sweet Kolaches are delightful, too. I enjoy the Nutella one as well as the maple pecan (that's my usual go-to). Their annual Harry Potter event is super fun and the sweet Unicorn blood Kolache is the bomb.

The staff can some times come off a little cold and not super welcoming, so they could work on that. They are a little local place, so I'd love for it to feel more homey and welcoming like what you'd expect from a local family-owned place. (Greeting you when you come in, saying thank you for visiting, offering recommendations on your first visit, smiling when you enter the restaurant, etc.)
I live about 30 minutes from this place and it would be super nice to order and pay ahead on the phone before coming in. It's quite a drive and then waiting in line a long time can be a drag. Luckily the food is worth it, but it's a service that would be really nice. I do like that they offer special orders. If you place an order of 12 or more, you can order and pay for them the night before and then pick them up the next morning. However, if you don't plan in advance, they will not let you order and pay for them over the phone.

The most important, I’ve stopped eating their savory kolaches because on multiple occasions I’ve gotten ones that had what seemed to be not fully cooked sausage and chicken. They didn’t break down when chewing, they had a bad flavor, and they made me gag a little. The ones I’ve had that were cooked were excellent (of which have been their Sausage, Egg & Cheese; Ham, Egg, & Cheese; Chicken Cilantro Omelet; and the Sausage and Gravy). But now I have this cautionary warning go off in my head that says this may or may not be a good decision.
The wait to order always seems to be a 30+ minute ordeal. Probably because of the size of the location. An upgrade would be nice to accommodate a better in and out flow.

My partner and I have loved these Kolashes for years and they were even a part of our weekly routine where I would take them to her job for breakfast on my day off, unfortunately they seem to have taken quite a dip in quality the past few months. About a month or two ago we found a hair in our first of four kolashes and were so grossed out we had to toss them all. We took a break for a little while until we could build up the courage to go back yesterday and give them another shot. This time excitedly we both bit down and discovered huge chunks of egg shells baked into the kolaches. We have sadly come to the conclusion that we’re just done. You don’t get three strikes when it comes to food. I hope eventually they find can find and hold on to good employees that know how to handle food safely.
