I don’t often write long reviews, but when an experience truly stands out in every way, it deserves recognition — and my recent Tuesday night visit to Darby American Cantina was nothing short of exceptional. From the moment I walked through the doors to the last sip of my drink, I was met with a level of service, atmosphere, and hospitality that was beyond compare. I can say with complete sincerity that this has become one of my favorite places, and Patrick, the bartender, is a huge reason why.
Let me start with the vibe and atmosphere: Walking into Darby American Cantina on a Tuesday night, I wasn’t expecting such a lively and welcoming environment, but I was immediately drawn in by the energy. The bar was active but not overcrowded — the perfect balance between buzzing and comfortable. The lighting was warm, the decor was clean and modern yet cozy, and the music and TVs were set to just the right volume. One of the highlights of the night was that the sound was on for the MLB All-Star Game, and it honestly felt like we were all watching it together in the best living room possible. That detail alone showed me how well they cater to sports fans — a subtle but powerful way to elevate the night for guests who came in for the game.
Now onto the true MVP of the night: Patrick, the bartender. It’s no exaggeration when I say Patrick is the BEST. I’ve had countless bar experiences across restaurants in Redlands and the Inland Empire, but very few bartenders bring the kind of professionalism, charm, and genuine care that Patrick delivers consistently. From greeting me with a smile to remembering what I liked, checking in at the right times, making phenomenal drink recommendations, and overall just creating a good time, Patrick has that rare ability to make you feel like a regular — whether it’s your first visit or your fiftieth.
What sets Patrick apart is that he isn’t just pouring drinks — he’s setting the tone for the entire night. His attention to detail, his quick wit, and the ease with which he manages a full bar while still making you feel seen and appreciated is something that cannot be taught — it’s a gift. Every interaction was smooth, warm, and made the night not just fun but memorable.
In terms of drinks — phenomenal. Whether you’re in the mood for something classic, refreshing, strong, or creative, Patrick knows how to craft a cocktail that hits the mark. His knowledge of the menu, ability to gauge your preferences, and execution behind the bar is professional-level — but it’s also done with heart. You can tell he loves what he does, and it shows.
Let’s also talk about the overall service and ambiance: The rest of the staff was also friendly, attentive, and professional. The place was clean, organized, and full of good energy. It’s the kind of environment where people are laughing, talking, watching the game, and feeling like they belong. That’s no small feat. It’s a rare thing to find a bar that feels like both a hangout and a special occasion, depending on what you’re looking for — and Darby hits that sweet spot.

Would I recommend Darby American Cantina? A thousand times over.
Would I go back? Already planning on it.
Who would I tell to go there? Literally everyone I know who values great service and an unbeatable bar experience.

Darby American Cantina is lucky to have someone like Patrick behind the bar. He elevates the whole establishment, and I would go back just for him — a thousand times over. I had always had problems with the service here, but I just chalked it up to...Oh, it's a busy time of day. Oh, I decided to sit at the bar so I can't expect to have quick service. Oh, they're restaffing because of Covid. But I just can't make excuses anymore.
I went in for a beer and a sandwich. Sat outside. Waiter and waitress walked by me several times, finally I ask another employee who's supposed to be serving me, he says, 'that girl'. So finally 'that girl' - who had already been by my table - comes by, I've already been there 20 minutes - I order a beer and the BLT NO AVOCADO. When it arrives (as it always does) with the avocado on it, I accept it, because not everybody enjoys a crisp BLT like me, maybe they like a mushy texture... whatever. It's fine. I'll wash it down with another beer.
So when the food is brought out, I order another beer, as I've almost finished the one I started when I ordered. Well that beer never showed up. I finally finished my sandwich dry and had to order my drink at the bar.
I never saw 'that girl' again. Until she dropped off the check. Again, after I requested it from the bar. Not because she dropped by the table.
I hope 'that girl' has a fun side-gig or whatever she was doing in the hour and fifteen minutes I was at the restaurant. The place was not packed. And she seemed to have plenty of help. I just don't know where she was.
I would give one star, but I know the kitchen staff works really hard, and the food is always solid. I just think it's a shame the wait staff can't do the cuisine justice. I think maybe 'that girl' might have been hired, not for her ability to serve food, but for...
Read moreI have been here several times over the 3 years I have lived in Redlands & this is my second negative review for Darby's which is unfortunate because its in a wonderful location & the food isn't bad. Last night, my partner and I arrived around 10:15 for drinks (NO food) mind you we have came around this time before & were able to get served food and drinks. When we walked in, we weren't greeted (the usual) but we wanted to sit at the bar, which was pretty full but had a few seats open. We didn't even get to sit down before we were greeted with a "nope" & head shake from one of the bartenders, my partner said "are you guys done?" he said yup. Which makes no sense, why does Finney's do last call 10 minutes before closing but Darby's does it 40 minutes before closing?? I have never heard of a bar doing last call so early. And even if they do, there is no reason to be so rude about it. I even walked up to another bartender for clarification & he turned away from me while the 3rd bartender answered "every night is different, we close early today so last call is early". These men were extremely rude & we were denied service meanwhile everyone else at the bar were still being served. We are polite & tip well, not sure what this issue was here. Save your time and...
