New French Restaurant in St. Pete – Cognac’s Soft Opening Impresses! I was lucky enough to stop in for a carafe of wine at Cognac, the highly anticipated new French restaurant in St. Petersburg, FL. The energy was palpable—the staff, patrons, and kitchen team were all buzzing with excitement. From what I gathered, this opening has been a long time coming, and it’s clear they’ve poured their hearts into it. Even in the last few nights leading up to the soft opening, I noticed the team working tirelessly to perfect every detail, yet they still made time to wave and acknowledge passersby—a testament to their warm hospitality. Although the soft opening was reservation-only, the team graciously welcomed me in for a drink. I ordered a beautifully balanced rosé in a carafe, which was both delicious and reasonably priced. While I didn’t dine this time, the buzz about the food was undeniable—every table around me was raving, and from what I overheard, the escargot is already a standout favorite. The atmosphere is stunning—bright and welcoming while maintaining a cozy, modern Parisian charm. I’m still not sure how they pulled off such a perfect balance, but they did! Cognac comes from the same owners as the beloved Bacchus in St. Pete, and it looks like they’re bringing that same exceptional quality, great value, and well-curated wine selection to this new venture. The highlight of our evening, however, was Paul, our server, who elevated the entire experience. His attentiveness was seamless—always present when needed, yet never intrusive. He guided us through the menu with thoughtful insight and made each recommendation feel personal and inspired. His grace, humor, and professionalism were the embodiment of French hospitality at its finest. What made the experience truly exceptional was the seamless support of the entire team around him. Every member of the staff was in tune with our needs—anticipating each desire, refilling glasses, clearing plates with quiet precision, and doing so with genuine warmth. It was clear that the service at Cognac is not the work of one person alone, but a beautifully choreographed effort by a team dedicated to creating an unforgettable dining experience. The cuisine was exquisite, of course—every course more memorable than the last—but it was the service and the ambiance that transformed our dinner into an experience we’ll be talking about for years to come. I felt that the service could’ve been a little better because I went there for lunch and there was hardly anybody in the place. The food is very, very reasonably priced. However, the food doesn’t taste all that great. I would give it average at best, which is disappointing when you bill yourself as a French restaurant. The food looks good, but it’s barely average like I said previously, and when I ordered the food, the food came out quickly. Now for most restaurants when the food comes out quickly, that’s a good thing but for a French restaurant, a real authentic french restaurant takes their time preparing food so I’m used to waiting 20-30 minutes for a simple entree. The food came out so quickly that it made me think that it was premade. The dessert I had was the crème brûlée and I couldn’t have been more disappointed. It had almost no flavor to it. Now for somebody who is not accustomed to authentic French cuisine, you might think that this food is outstanding because of the atmosphere and the way it’s decorated but the quality unfortunately just isn’t there. And like I said, could’ve been a friendlier environment. I mean I walked past the owner twice and he didn’t greet me as I was coming in nor did he thank me for my business on the way out or tell me to have a good day and he was wearing shorts! The server was tipped 15% in cash.

Tout était parfait. In an era where the true “fine dining” experience is slowly becoming obsolete, Cognac stands as a shining exception. Too often, diners are hurried out to make room for the next reservation, met with impatient glances if they linger past closing. And, goodness gracious if they do, those last few moments of joy are interrupted by impatient waiters nosily looking up from their side work hoping to encourage the customers to leave. But at Cognac, the art of hospitality is alive and well, redefining what a memorable dining experience should be.

Last night, I had the immense pleasure of dining at this exceptional French establishment. Owned by two French gentlemen, Cognac effortlessly transports you to a bustling Parisian brasserie. The atmosphere is warm, inviting, and refreshingly unhurried.

Now, I could go on and on about the food, which, was exquisite. Escargot served in its shell-a rarity these days-offered a succulent, buttery bite, with the shell acting as the perfect vessel for the rich herb-infused butter, just waiting to be poured over lightly toasted crostini. The salad, made up of tender lettuce gems crowned with citrus and tossed in a delicate dressing with hints of goat cheese. I can, and will, dream about the lamb chop-perfectly cooked, tender, and served with a decadent yet balanced red wine sauce. Each dish was thoughtfully crafted, allowing the quality of the ingredients to shine through in both simplicity and presentation.

But oddly, the food was not the star of the show. The service was. Paul, our waiter created a sense of hospitality that is unmatched in St. Pete right now. Our long and enjoyable dinner was punctuated with short visits from him. He would appear only to quietly refill a water glass or ensure that we didn’t need another glass of wine. We did. He made us feel perfectly at home allowing us to sit and talk by ourselves while sipping the bottle he helped us select after allowing us to try an annoying number of options. Never for one moment did we feel like a nuisance or that we overstayed our welcome. This young man knew more about how to truly entertain a guest than many of the fine and fancy restaurants I have been lucky enough to visit through my life.
