Before visiting a place, I like to do a little research, I really wanted to visit Casa Chimayo Restaurant, I waited 6 months and my expectations were different, I understand that sometimes restaurants have a lot of work, but when it takes more than an hour to serve you, food is because there is a problem, 20 minutes passed and I had to get up from my table to call a waiter to take my order, the waiter took 10 minutes to arrive to take my order, (only the drinks) I told him I wanted order the food at once, she responded (the owner of the place) that she had to go get a book to write down everything, I understood that she had to write down the order, another 10 minutes passed before the person returned to take the order, ( They brought us chips and salsa almost 40 minutes after our arrival at the restaurant, our food arrived 20 minutes after our period, by that time, we had already had a little more than an hour in the restaurant, I ordered an elote and a chile en nogada, I liked the chile en nogada, the roasted corn was cold, we finished eating and no one came to charge us, I had to get up from my table again and I had to ask a waiter to come and charge me or pay at once (for True, she was a minor, I don't think she's over 14 years old, although she's possibly a relative of the owners) the owner arrived at the table 10 minutes after I asked for assistance to pay, she didn't get to collect, she came to clean the table. table, I was already standing, ok, I tried not to lose my patience, or be rude, after he left with some dishes, (because I didn't clean the entire table) my family stopped, and started leaving the place Fur when they decided to charge, they wanted to give us a dessert, (they know that the service was horrible) If I consume I am willing to pay what they charge me, (180dlls was what I paid) the tip that I give will be equivalent to the service. lent, this time it was zero, I paid electronically, for some reason the owner did not want to send me the receipt via email, (I think she did not want to give me a link to do a review) she did not try to give me a paper receipt, I had to ask for it I hope they improve on that point, I know there are people who have had good experiences here, maybe I arrived on a bad day, but my experience was not to return, I am not a person who usually gives reviews, I only give them unless the .service be excellent or...

I began with elote, cut off the cob tableside by the waiter in an especially aesthetically pleasing manner with how whole 'ribs' of corn are intact on the plate, leaving it up to the consumer whether to fork them into smaller niblets or go for the full xylophone effect at once, enjoying the bursts of flavor with each chew. The corn was perfectly ripe with just the right balance of seasoning. I always order elote whenever I see it on a menu so I have a lot of experience to compare with and this is certainly one of the best. Other places may just serve all the niblets in a bowl with fantastic seasoning and it can be tastier than this one but none feels as authentic as Chimayo's and the plating beats all!
For my entrée, Pato en Mole. This is a risk and a departure for me, duck in a Southwestern restaurant?! Perish the thought. It works though. Despite the fact that it's aptly drowned in an excellent mole I could tell that it was a little overcooked albeit in its favor because some of the nearly crispy bites were somewhat caramelized in a tasty manner, cover it in mole and it becomes special. The sides on the plate are fine, nothing particularly craveable.
For dessert, the coconut flan. Home run! Perfect texture whereas most flan I've had in the past is too "solid" and made too quickly and carelessly and comes out like old Jello. Here, your spoon will easily slide right down to the plate with a light click just the way you want it to. Add some viscous caramel, tasty coconut flakes and cream and this is a great success! More outstanding plating with this item. Three of us solo diners at different tables formed a triangle consuming things at different times but we all met with the flan, each of us simultaneously understanding in silence this gustatory reckoning. My one small critique is that it definitely needs more caramel because there's not enough for every bite. I would also prefer a bit more coconut but the flan itself is of such quality that it's pleasurable on its own.
The horchata seemed on spot but I haven't had this enough to really know... regardless, I would order that again. Wish I wasn't hungover so that I could try some of their other drinks! Next time... and there will certainly be a next time!
The environs are particularly cozy and tasteful which inherently adds to the dining...
Read moreYou know when you walk in and are hit by photos of the Abuelas that this food takes its inspiration from that it is going to be 🔥.
The atmosphere truly lives up to the “Casa” in its name, because you feel like you are in someone’s home in a warm atmosphere with history, family and love.
The food is just simply incredible, with everything being made from scratch and meticulously crafted from decades of perfected recipes.
I’m from Tulsa and all over the Midwest you can find good birria, and other traditional dishes from taco trucks and hole in the wall places. Nothing lives up to a place like Casa Chimayo’s rich New Mexico style dishes bursting with homemade flavor.
The Chile en Nogada was such a unique dish and my wife got the Blue corn Huaraches with Carne Adovada. They really nailed everything about these entrees. Our appetizer was one of the best thing I’ve ever tasted, fried jalapeños stuffed with goat cheese and topped with pickled red onion.
The food was so good we had to try the flan de coco which was rich creamy and had the perfect touch of toasted coconut.
We even enjoyed some traditional margaritas which warmed the experience on a chilly day.
The owners, cooks and servers take this traditional food very seriously and meticulously cook and serve you as if you were friends and guest in their houses.
What an experience, the Abuelas are truly present in spirit, as part of the magic of this place, passing down through the decades the wonderful recipes and traditions they have to their children, so that we can enjoy them today.
What a wonderful experience, you won’t regret this unique restaurant, it is a must try, and now at the top of my Santa Fe food...
