This bar has so much potential. They just need to invest in paying a local to develop their cocktail menu. A quick glance around shows that they sunk some bucks into the decor and whoever they hired really did their research. Aesthetically, the place really showcases the pride of Chimayo. The cocktail menu is a mess. Fernet? “AZTEC chocolate bitters” ? Their signature Chimayo margarita contains tequila infused with SERRANO. Chimayo is world renowned for their red chile, it wouldn’t be that difficult to infuse their tequila in-house with Chimayo sourced chile. If you’re expecting a bar that highlights South American spirits coupled with the odd Mexican tequila and [Mexican] chile pepper, this bar is for you. If you’re looking for any type of authenticity or ode to Chimayo (or New Mexico in general at the very least which their website says can be found here), this place isn’t for you. We were told at the lower level of the restaurant that we could go upstairs for a drink. I asked the bartender at the top of the stairs if that was OK and he said that it was the chef's policy that we must have something off of the menu in order to buy a drink?? Read moreI visited Low and Slow a couple of times in the last few weeks. Creative drinks at the bar, friendly service, and outstanding pizza were had. I can't say enough about the pizza. I think of it as artisan pizza along the lines of Tender Fire, with more choices and a lower price point. If you are looking for a feel of Chimayo without making the trip north, this place is for you. My only gripe is that I tried to stop by for a third visit last week, but this popular little bar was standing room only.
