Uncle DT is serving up some seriously good bbq! Without a doubt, the best Santa Fe has to offer. Accommodating to the local clientele, he does also have gluten free, vegetarian and vegan friendly offerings such as curry coleslaw and smoked tofu, tofu sandwiches and salads, to accommodate anyone in your party. However. that was not a consideration with our party. We enjoyed the smoked brisket and a 1/2 rack of Chimayo pork ribs. The brisket was excellent and tender and very well smoked but the Chimayo ribs were out of this world. Extremely flavorful, tender, unique and paying homage to a great local chile. Both plates came with 2 sides and some chips. Let me tell you, the sides are terrific! We got potato salad, cowboy beans, mac n cheese and the Killer Curry Coleslaw. The curry coleslaw is unlike any other slaw I've had. It's bursting with flavor and is seasoned exotically with most noticeably, a mild turmeric undertone. I ordered the pulled pork sandwich, because if you mess that up, I'm not going back. GOOD STUFF. Excellent pork on the leaner side not dripping in anything, PULLED not shredded.....dare I say "pillowy". The sauce on the side (as it should be) is also great. Perfect mix of Carolina vinegar and saucier sweet KC or Texas sauce. And the bun, yum - this isn't a store bought hamburger bun. Ordered a side of the potato salad. I was nervous, I won't lie. I'm used to "tater salad" and the description on this said it has scallions and edamame in it, I was afraid it was above my fancy level. Again - not disappointed. The edamame is a delightful texture in a pretty tasty potato salad. If I was forced to critique anything - a little salt and pepper in the potato salad wouldn't offend me. Overall, I'm sold. So happy to have real BBQ in Santa Fe. Looking forward to my next meal...

The portions were good and the meat very tender. We had pulled pork, brisket and ribs. Slaw was creamy with good flavor. The potato salad was unique as they used purple potatoes. It tasted good but our preference would be to be a bit more creamy. Duke's mayo would probably do the trick. š Loved the hole-in-the-wall atmosphere as you feel like you've been invited to someone's garage for some great BBQ.
