Update: Tried again, as I used to love this place. The flavor of my coffee was good, but the espresso is still very weak. Ordered an 8oz Americano, specified two shots, and was still served a single shot. Far weaker than a standard double anywhere else.
I've had this problem with multiple baristas, so I have to assume at this point that it is a conscious decision from the management.
If you insist on serving weak shots, please put up a sign or something explaining why and how you brew differently from every other shop. If I have to specify two ristrettos or whatever term you want, I can.
Update: Prices has gone up (which is fine) but the coffee quality has dropped. The espresso is much more bitter than it used to be. Last time I went in, the barista only pulled two shots rather than the three I had paid for.
When asked about this, he made up some nonsense about pulling double shots. To be clear, he only filled two shot glasses (I saw the pour). A long (or double) pull is not the same as two short pulls, the grounds were the same. Also, even if he had pulled a pair of doubles, that would still have not been what I had ordered.
Americano was definitely weak. Not happy about that.

Solstice perfectly captures Seattle's weird and funky vibe in a charming way; Interior is an incredible combination of wood and industrial. It has a high-ish roof with skylights (a rarity in Seattle buildings and makes it less of a cave), which makes the interior lighting a perfect mix of cave-like security and connection to the outside world. Funky art on the wall. Their background mix will introduce you to funky alt songs that make you wonder how you've never heard of them before.
More than most other cafe's it attracts a variety of interesting characters that are just interesting to observe when you're taking a 20-20-20 or a 5-10 minute break. Whereas other Cafes just offer a good environment for working or studying, Solstice is confident to do it with personality, which makes it much more of a living breathing animal you have the honor of meeting. Read moreIf you're a tea lover, you'll enjoy this Cafe with your coffee drinking friends as it has quite a few loose leaf tea options. On a gloomy morning, I usually go for the London Fog. Their London Fog is actually made nicely. They steep the tea long enough, so you can taste the aroma of the earl grey perfectly. It's also not too sweet. I usually don't like my London Fog overly vanilla or overly sweet. Their baked items are good but I prefer their savory options more often. I enjoy their southwest veggie burrito which is always nicely toasted and their cookies. My favorite is their ginger molasses which is both soft and crunchy. I do like the ambiance and the airiness of the place. You can easily social distance while working on your laptop. I do enjoy the music and the comfy seating as well. Bring your earbuds or headset, if you don't like to work with louder music in the background. The staff can come off a little cold from time to time but I don't let that overshadow...
