My wife and I recently had the pleasure of dining at Guillotine, an extraordinary restaurant with a kitchen helmed by the talented Chef Joey and his Sous Chef Rachel. From the moment we walked in, we knew we were in for a treat. The ambiance was charming and inviting, setting the stage for an unforgettable culinary journey. The attention to detail at Guillotine is impeccable. Chef Joey and Chef Rachel's commitment to excellence is evident in every aspect of the dining experience. Even the butter, which was homemade, was a delightful indication of the artisanal care put into each element of the meal. The menu at Guillotine is a testament to true local artisan cuisine, featuring dishes crafted from foraged ingredients. This dedication to sourcing the freshest and most unique components results in flavors that are both innovative and deeply satisfying. This food was disgraceful. I couldn’t even bring myself to take a bite. The steak tartare was as already grey and the vegetables plate was literally watery burrata with a couple of floating vegetables. This is literally after we wait to eat this in person but it took over an hour and we asked for it to go. They comped a rainier and some fries. They also told us they were only serving 3 different cocktails for the night and I had to ask multiple people for what beers they offered which the last person reluctantly mentioned only having a rainier available. I was devastated when Witness closed but wow - what a transformation and need on Broadway!

We became familiar with one of the owners at a previous bar where I had some of the best cocktails of my life. Hearing he was about to open the bar in one of my favorite spaces led to months of excitement while waiting.

My first visit here didn't disappoint - an amazing transformation of this space complete with the expert cocktail making that made me fall in love with the owners years ago.
