My wife and I recently had the pleasure of dining at Guillotine, an extraordinary restaurant with a kitchen helmed by the talented Chef Joey and his Sous Chef Rachel. From the moment we walked in, we knew we were in for a treat. The ambiance was charming and inviting, setting the stage for an unforgettable culinary journey. The attention to detail at Guillotine is impeccable. Chef Joey and Chef Rachel's commitment to excellence is evident in every aspect of the dining experience. Even the butter, which was homemade, was a delightful indication of the artisanal care put into each element of the meal. The menu at Guillotine is a testament to true local artisan cuisine, featuring dishes crafted from foraged ingredients. This dedication to sourcing the freshest and most unique components results in flavors that are both innovative and deeply satisfying. Each bite was a revelation, showcasing the chefs' ability to elevate simple, local ingredients into extraordinary culinary creations. From the starters to the desserts, every dish was a masterpiece. The presentation was as stunning as the flavors, with each plate looking like a work of art. The foraged ingredients added a unique touch, making every bite a celebration of the local terroir. One standout dish was the mushroom filet, which perfectly captured the essence of the forest. The balance of flavors and textures was spot-on, leaving me wanting more. Another highlight was the trout almondine pasta, prepared with a light, herb-infused sauce that complemented the delicate flavors perfectly. Dining at Guillotine was an extraordinary experience that we will not soon forget. The combination of impeccable attention to detail, amazing food, and a true commitment to local artisan cuisine makes this restaurant a must-visit. Chef Joey and Chef Rachel have created something truly special, and I cannot recommend it...
Read moreThis food was disgraceful. I couldn’t even bring myself to take a bite. The steak tartare was as already grey and the vegetables plate was literally watery burrata with a couple of floating vegetables. This is literally after we wait to eat this in person but it took over an hour and we asked for it to go. They comped a rainier and some fries. They also told us they were only serving 3 different cocktails for the night and I had to ask multiple people for what beers they offered which the last person reluctantly mentioned only having a rainier available. Worse restaurant experience I have had in...

We became familiar with one of the owners at a previous bar where I had some of the best cocktails of my life. Hearing he was about to open the bar in one of my favorite spaces led to months of excitement while waiting.
My first visit here didn't disappoint - an amazing transformation of this space complete with the expert cocktail making that made me fall in love with the owners years ago.
I haven't tried the food yet but it's looking great from what I can see. Welcome to the neighborhood...what...
