Capitale is a magical haven for everyone, including vegetarians and I hope it thrives since we need more exceptional indie restaurants in Capitol Hill. I'm also a small business owner and these folks deserve all of your money. I impulsively ordered takeout here tonight and was quite pleased with the entire experience. The service from the presumed owned was excellent, he is personable and accommodating. I drank a glass of red wine while I waited and they know how to pick a red wine. The atmosphere inside is gorgeous. And, now that I'm home and eating, the food exceeds expectations. This IS the best pizza in Capitol Hill (yes, I've tried all of them). The crust is god-tier (and I'm someone who is very serious about all forms of bread). The crust is not bitter or black on the bottom despite being cooked at a very high heat, which is something you cannot get ANYWHERE else in this neighborhood.The crust is appropriately chewy but still light. It's not a bland crust. I cannot find a single flaw in their crust. I ordered a vegetarian Tokio pizza and a Carcioffi salad. The Tokio tastes like an amazing blend of mixed, earthy mushroom textures and flavors with sharp Romano cheese. The salad is so good that my partner (generally someone who is agnostic towards salad) is currently inhaling it. TL;DR - A+ recommend

We highly recommend starting with the Beet salad — a vibrant mix of beets, arugula, Gorgonzola dolce, pickled red onions, black olives, and pistachio praliné, dressed in a soy/rice vinegar/honey and extra virgin olive oil sauce. The Seattle pizza is a must-try: a basil pesto base topped with creamy Italian Stracciatella cheese, smoked salmon strips, red onions, leeks, shaved Italian Pecorino Romano DOC cheese, fresh oregano, and a drizzle of extra virgin olive oil. The Burrata appetizer is another standout — a 4oz creamy burrata paired with cherry tomato confit on a bed of flavorful housemade pesto sauce, served with freshly baked focaccia. For dessert, the Affogato is the perfect finish: a scoop of vanilla gelato with a fresh shot of Italian espresso. Honestly, everything we tried was delicious. The menu is creative and full of global inspiration, and the service was warm and attentive. Highly recommend this spot in Capitol Hill — we’ll definitely be back!

Capitale Pizzeria – A True Gem in Seattle

This is now my absolute favorite pizzeria in Seattle, and if I’m being honest, it might just be the best on this side of the country. Capitale Pizzeria exceeded all our expectations with its incredible flavors, fresh ingredients, and inviting atmosphere.

We’ve tried several different pizzas here, and my top pick has to be the Lisboa. It perfectly captures the flavors and ingredients of the classic Brazilian "Portuguese" pizza, making it a delightful trip down memory lane. A close second is the Napoli, which was equally impressive.

Everything about our visit was perfect: the dough is wonderfully crispy and flavorful, the toppings are fresh and perfectly balanced, the wine selection is diverse, and the cozy ambiance made for an absolutely fantastic dinner.

Without a doubt, Capitale Pizzeria has won us over. We’ll definitely become regulars, and I can’t wait to return for more! Highly recommend this place to anyone looking for an authentic and unforgettable...
