Capitale is a magical haven for everyone, including vegetarians and I hope it thrives since we need more exceptional indie restaurants in Capitol Hill. The service from the presumed owned was excellent, he is personable and accommodating. I drank a glass of red wine while I waited and they know how to pick a red wine. The atmosphere inside is gorgeous. And, now that I'm home and eating, the food exceeds expectations. This IS the best pizza in Capitol Hill (yes, I've tried all of them). The crust is god-tier (and I'm someone who is very serious about all forms of bread). The crust is not bitter or black on the bottom despite being cooked at a very high heat, which is something you cannot get ANYWHERE else in this neighborhood.The crust is appropriately chewy but still light. It's not a bland crust. I cannot find a single flaw in their crust. I ordered a vegetarian Tokio pizza and a Carcioffi salad. This is now my absolute favorite pizzeria in Seattle, and if I’m being honest, it might just be the best on this side of the country. Capitale Pizzeria exceeded all our expectations with its incredible flavors, fresh ingredients, and inviting atmosphere.
We’ve tried several different pizzas here, and my top pick has to be the Lisboa. It perfectly captures the flavors and ingredients of the classic Brazilian "Portuguese" pizza, making it a delightful trip down memory lane. A close second is the Napoli, which was equally impressive.
Everything about our visit was perfect: the dough is wonderfully crispy and flavorful, the toppings are fresh and perfectly balanced, the wine selection is diverse, and the cozy ambiance made for an absolutely fantastic dinner.
